DAD'S BASIC MOIST PORK ROAST

Dad's Basic Moist Pork Roast image

This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

Tips:

  • Select a high-quality pork loin roast: Look for a roast that is evenly colored and has a firm texture. Avoid roasts that are excessively fatty or have a strong odor.
  • Prepare the horseradish crust in advance: This will allow the flavors to meld and develop. You can make the crust up to 2 days ahead of time and store it in the refrigerator.
  • Use a meat thermometer to ensure that the pork is cooked to your desired doneness: The internal temperature of the pork should reach 145°F for medium-rare, 155°F for medium, and 165°F for well-done.
  • Let the pork rest before carving: This will allow the juices to redistribute throughout the roast, resulting in a more tender and flavorful dish.
  • Serve the pork with your favorite sides: Some popular options include roasted vegetables, mashed potatoes, or a simple green salad.

Conclusion:

Roast pork loin with horseradish crust is a delicious and elegant dish that is perfect for a special occasion dinner. The pork is succulent and flavorful, and the horseradish crust adds a delightful tanginess. This dish is sure to impress your guests and leave them wanting more.
