Yield Serves 6

Number Of Ingredients 7

8 ounces assorted mushrooms, thinly sliced (about 3 cups)
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
1/4 cup loosely packed fresh sage, coarsely chopped
4 garlic cloves, halved lengthwise
2 pounds small fingerling potatoes, scrubbed and sliced 1/4 inch thick
6 ounces Taleggio cheese (rind removed), sliced

Steps:

  • Preheat oven to 400 degrees. Toss mushrooms with 4 teaspoons oil and 1/2 teaspoon salt. Season with pepper. Toss with sage and garlic. Spread on a rimmed baking sheet, and roast until mushrooms are golden brown and tender, about 15 minutes.
  • Toss potatoes with remaining 5 teaspoons oil and 3/4 teaspoon salt. Season with pepper. Divide potatoes between 2 rimmed baking sheets, spreading in an even layer. Roast, rotating pans halfway through (tossing if browning too quickly), until dark golden brown and crisp, 35 to 40 minutes.
  • Preheat broiler with rack 6 inches from heat source. Toss together mushrooms and potatoes, and divide evenly between two 5-by-7-inch oval baking dishes. Top each with Taleggio, and broil until cheese melts and is pale golden, 2 to 3 minutes.

ROASTED FINGERLING POTATOES WITH SEASONED SALT

Number Of Ingredients 6

2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon finely chopped fresh thyme
1/4 teaspoon finely chopped fresh rosemary
1 1/2 pounds fingerling potatoes, scrubbed
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees. Heat a large ovenproof gratin dish or skillet in the oven 15 minutes. Combine salt, pepper, thyme, and rosemary in a small bowl.
  • Toss potatoes in a medium bowl with the olive oil. Sprinkle generously with seasoned-salt mixture, and arrange potatoes in a single layer in preheated pan. Roast until they are golden on the outside and tender when pierced with a sharp knife, 25 to 30 minutes. Remove from oven, and serve hot with additional seasoned salt on the side.

Tips:

  • Choose the right potatoes: Fingerling potatoes are the best choice for this recipe because they hold their shape well and have a creamy texture. If you can't find fingerling potatoes, you can substitute small red potatoes or new potatoes.
  • Don't overcrowd the pan: When roasting the potatoes and mushrooms, make sure to spread them out in a single layer on the baking sheet. This will help them roast evenly and prevent them from steaming.
  • Roast the potatoes until they are tender: The potatoes are done roasting when they are tender on the inside and slightly crispy on the outside. This will usually take about 20-25 minutes.
  • Add the mushrooms at the end: The mushrooms will cook quickly, so add them to the baking sheet during the last 5-10 minutes of roasting.
  • Use a good quality Stilton cheese: The Stilton cheese is the star of this dish, so make sure to use a good quality cheese. Look for a cheese that is creamy and flavorful.

Conclusion:

This roasted fingerling potatoes with mushrooms and Stilton cheese is a delicious and easy-to-make side dish that is perfect for any occasion. The potatoes are roasted until they are tender and crispy, the mushrooms are sautéed until they are browned and flavorful, and the Stilton cheese adds a creamy and tangy flavor. This dish is sure to be a hit with everyone at your table!
