Steps:

8 8-inch fat-free flour tortillas

Steps:

  • Shred crab meat; mix together with sour cream, lime juice, and green onions in a small bowl.

  • Heat griddle or small frying pan with a small amount of oil or cooking spray.

6 cups all-purpose flour
6 cups cornmeal
1 cup sugar
7 tablespoons baking powder
6 eggs
6 cups milk
1 1/2 cups vegetable oil
12 eggs, separated
6 cups sugar
3 cups shortening
2 tablespoons vanilla extract
1 teaspoon salt
9 cups flour, plus additional for flouring blueberries and cake pan
2 tablespoons baking powder
2 cups milk
6 cups blueberries
Butter, for greasing pan

Steps:

  • Rinse the clams well, then soak in fresh water for 30 minutes.
  • Layer all ingredients in a seaweed wrap in this order: clams, potatoes, and onions next to each other on the bottom, then lobsters on top of them, then corn as the highest layer. Wrap very tightly with a double layer of foil making sure there are no holes in foil (essentially making a pressure cooker). Cover the foil pack with additional seaweed. Light a wood fire. Cook over fire for 30 minutes.

  • Preheat oven to 450 degrees F.
  • Grease 2 (12 by 18 by 1-inch) baking pans and warm in the oven while preparing the ingredients.
  • In a large mixing bowl, mix the dry ingredients together. In a separate bowl, mix the eggs and milk together. Then mix the egg/milk mixture into the dry ingredients. Add the vegetable oil and mix. Pour mixture into the hot baking pans and bake for 20 minutes.
  • Preheat oven to 350 degrees F.
  • Beat the egg whites; set aside. Mix the egg yolks with sugar, shortening, vanilla, and salt.
  • In a separate bowl mix the 9 cups of flour and the baking powder. Mix the flour mixture with the egg mixture, slowly adding the milk. Fold in the egg whites. Flour the blueberries and then fold them into the cake batter. Butter and flour 2 (12 by 18 by 1-inch) baking pans. 1/2 cup sour cream

  • For Quesadillas:
  • Preheat oven to 500°F.
  • In a large shallow baking pan, toss asparagus with 1 1/2 teaspoons oil and salt and pepper to taste until coated well. 3 slices bacon, chopped
1 medium onion, chopped
2 ribs celery, chopped, with greens

1 cup chicken stock
1 cup milk
2 cups shredded sharp white Cheddar
1 (6-ounce) tub lump fresh crabmeat, flaked
1 cup frozen corn kernels
1 tablespoon fresh thyme leaves, chopped
Couple pinches cayenne pepper
3 tablespoons chopped or snipped fresh chives

Steps:

  • Bring pasta water to boil and salt it. Cook pasta to al dente.
  • While pasta cooks, heat a large, deep skillet over medium to medium-high heat. Add extra-virgin olive oil to pan with the bacon. Cook bacon 3 minutes. Add onions and celery and cook 3 minutes more. Add bell pepper and cook another minute or two. Add flour and cook 1 to 2 minutes. Whisk in stock, then milk. When milk bubbles, add crab and corn to heat through, another minute. Stir in cheese, thyme and cayenne pepper. Melt cheese into sauce. Drain pasta and toss with cheese, crab and corn sauce. 1 tbsp. olive oil
1 medium yellow onion, chopped
1 lb. ground beef
8 6-inch corn tortillas
1 cup shredded Cheddar or Jack cheese
1 tomato, chopped

Steps:

  • Preheat the oven to 400°F. In a skillet, heat the oil over medium heat until simmering. Add the onions and cook for 5 to 7 minutes or until wilted. Add the beef to the skillet and cook for 7 to 10 minutes breaking the meat up with a wooden spoon until no longer pink, or until an internal temperature of 160°F has been reached. Remove the beef mixture from the skillet to a large bowl and let cool slightly. Add the Hidden Valley® Original Ranch® Sweet Chili Dressing to the beef mixture and stir until well coated. Place one tortilla on a parchment lined or oiled sheet pan. Spoon a fourth of the beef on top of the tortilla. Place another tortilla on top of that, then top with a fourth of the cheese and tomato. 3 tablespoons brown sugar
2 teaspoons chili powder

1 tablespoon onion powder
1 lime, juiced
2 tablespoons canola oil
1 large red onion, cut into 1/2-inch thick slices
4 ears corn, husked
12 10-inch corn tortillas
2 cups crumbled blue cheese
1/4 cup sliced pickled jalapenos
4 tablespoons canola oil
Sour cream, to garnish
Salsa, for garnish
Guacamole, for garnish
Cilantro sprigs, for garnish

Steps:

  • Preheat a grill or grill pan. Season the pork loin with salt and pepper. In a small bowl combine the brown sugar, chili powder, garlic, oregano, onion powder, lime juice and canola oil and mix to form a paste. Rub the paste all over the pork. Cover and refrigerate for 2 hours. Place the onion and the corn on the grill and grill until tender and slightly charred. Remove and set aside. With a knife, remove the kernels from the corn. Remove the pork from the refrigerator and place on the grill. Grill to medium, about 4 minutes per side. Remove from the grill and slice into thin slices. Wrap the tortillas in a damp paper towel or clean cloth and place in the microwave for 20 seconds to soften. Place 4 corn tortillas on a flat surface. Top with another tortillas and press down firmly with your hands on each stack. Brush the tops of each stack with some of the canola oil and place on a baking sheet. 8 flour tortillas
1 lb asparagus, peeled, and chopped into 2 inch chunks
2 poblano chiles, charred, peeled, deseeded, and chopped (use Anaheims or hot wax peppers if you wish)
1 onion, thinly sliced
1 cup monterey jack cheese, shredded (or to taste)
1/2 cup chicken broth
1 teaspoon cumin
1/2 lime, juice of

Steps:

  • Preheat oven to 325°F.
  • Add the onions into a skillet over medium high heat with a bit of oil for two minutes, then add the white asparagus(I haven't tried green).
  • Cook for five more minutes, stirring often, and then add the chiles, cook for 3 minutes or until the chiles are just soft and giving off their aroma. Squeeze the lime juice over the pan and scrape the bottom of the skillet, to get all the brown bits up(if any).
  • Add the chicken broth, and cumin.
  • Stir, reduce heat and simmer for 5 minutes, or until the asparagus is cooked through.
  • Fill the tortillas with equal parts filling, and cheese, and bake in the oven, flipping once, until browned on both sides, about 5 minutes per side.
  • Serve with pico de gallo, sour cream, and guacamole, with shredded iceberg salad.
  • You can also do it in a pan, but for a family, I find the oven the fastest way to do it.
