1 1/2-ounce package dried porcini mushrooms*
2 cups 1-inch cubes baguette
1 pound assorted fresh wild mushrooms (such as oyster and portobello)
1/4 cup (1/2 stick) butter
2 large shallots, chopped
3/4 teaspoon dried thyme
4 juniper berries (optional), crushed
1 6- to 7-pound roasting chicken; liver, heart and gizzard reserved, finely chopped
1 cup (or more) canned low-salt chicken broth
2 tablespoons chopped fresh parsley
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon brandy
*Dried porcini mushrooms are available at Italian markets, specialty foods stores and many supermarkets.

  • Preheat oven to 400°F. Place porcini in small bowl. Pour enough hot water over to cover; let stand until mushrooms soften, about 20 minutes. Drain.

1 small yellow onion, thinly sliced
1 pound assorted mushrooms (such as shiitake, cremini, and white), stemmed and quartered
2 tablespoons sherry vinegar
1 tablespoon all-purpose flour
1 1/2 cups homemade or low-sodium store-bought chicken stock
2 tablespoons chopped fresh flat-leaf parsley, plus sprigs
1 tablespoon heavy cream

  • Preheat oven to 375 degrees. Season chicken with salt and pepper. Heat oil in a large ovenproof skillet over medium-high heat. 1/4 cup butter, melted

2 cups mushrooms, chopped
4 cups dry breadcrumbs
1/2 teaspoon nutmeg
1/2 teaspoon salt
