4 tablespoons minced fresh rosemary or 2 tablespoons dried rosemary, crushed

1 whole roasting chicken (5 to 6 pounds)
6 small red potatoes, halved

1/2 cup unsalted butter, room temperature
3 tablespoons maple syrup
1 tablespoon fresh thyme, chopped
1 bunch fresh thyme sprig (separate 4 for serving)
1 whole chicken, washed and dried (about 3.5-4 pounds)
1 lemon, quartered
1 teaspoon salt
1 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Mix softened butter, maple syrup and chopped thyme into a paste.
  • Place chicken into a roasting pan and stuff cavity with lemon and all but the 4 sprigs of thyme. Loosen the skin on the chicken breast and thighs and spread half of the butter mixture under the skin.
