TOASTED CHICKEN SALAD SANDWICHES

Toasted Chicken Salad Sandwiches image

I love chicken salad sandwiches. For this recipe, I use a rotisserie chicken from the supermarket. The chicken is tossed with avocado oil mayonnaise, capers and dill relish, then layered on crusty bread with sliced radishes and butter lettuce. You can vary the flavor by adding herbs or some finely diced roasted red peppers. -David Ross, Spokane Valley, Washington

CRAIG CLAIBORNE'S CHICKEN SALAD SANDWICH

Craig Claiborne's Chicken Salad Sandwich image

Originally printed in 1981, here is Craig Claiborne's take on the classic chicken salad sandwich. In his version, a combination of mayonnaise (preferably homemade) and yogurt is used which yields a lighter, tangier sandwich filling. He calls for using poached chicken, but the leftover roast chicken from last night would work beautifully as well.

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 13

1 poached chicken, 3 1/2 pounds
1 cup finely chopped celery
1/2 cup finely chopped onion
1/2 cup drained capers

8 to 12 slices rye bread, either freshly toasted or left untoasted

  • Blend together the yogurt, mayonnaise and vinegar and add to the chicken mixture. Add salt, pepper, parsley and scallions and toss to blend.

Tips:

  • For the best flavor, use a high-quality mayonnaise. Look for one that is made with olive oil or avocado oil, and avoid brands that contain high fructose corn syrup.
  • If you don't have any celery on hand, you can substitute chopped red onion or green bell pepper.
  • To make the sandwiches even more flavorful, add a layer of your favorite cheese. Cheddar, Swiss, and provolone are all good choices.
  • If you're short on time, you can use a rotisserie chicken from the grocery store. Just be sure to remove the skin and bones before shredding the chicken.
  • Serve the sandwiches on your favorite bread. I like to use a hearty multigrain bread, but you can also use white bread, wheat bread, or even croissants.

Conclusion:

Roast chicken salad sandwiches are a delicious and easy lunch or dinner option. They're perfect for packing in a lunch box or enjoying at a picnic. With a few simple ingredients, you can make a sandwich that is both flavorful and satisfying. So next time you're looking for a quick and easy meal, give these roast chicken salad sandwiches a try. You won't be disappointed!
