½ cup prepared horseradish
1 (12 count) package Hawaiian bread rolls, split
12 slices deli roast beef
12 slices deli-sliced Swiss cheese
½ cup butter
1 onion, finely chopped
2 tablespoons brown sugar
1 tablespoon spicy brown mustard
1 ½ teaspoons Worcestershire sauce
1 pinch garlic powder, or to taste
2 teaspoons poppy seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Spread horseradish on the bottoms of the Hawaiian bread rolls and cover each with 1 slice roast beef and 1 slice Swiss cheese. Cover with top bread rolls.

1 tablespoon canola oil
1 baguette roll
5 ounces rare deli roast beef
2 slices Cheddar
4 ounces au jus or beef stock
2 tablespoons Horseradish Creme Fraiche, recipe follows
2 tablespoons sweet onion jam
1 cup baby arugula
1 teaspoon Apple Cider Gastrique, recipe follows
Salt and pepper
1 cup creme fraiche or sour cream
2 tablespoons prepared horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Dash hot sauce
Pinch each salt and pepper
2 cups apple cider
2 cups apple cider vinegar
1/2 cup white sugar
Peels and cores of 3 apples
1/2 teaspoon xanthan gum or apple pectin

Steps:

  • Heat up a skillet or cast-iron pan over medium heat, then add canola oil. Slice the baguette in half and toast in the skillet until lightly browned on both sides, about 1 minute per side. Remove the baguette to a cutting board. Add the roast beef to the same skillet, mounding in a shape similar to the baguette, then top with the Cheddar and add the au jus or beef stock. Cover the skillet with a lid and let it steam for 30 seconds. Meanwhile, add the Horseradish Creme Fraiche to one side of the baguette and the onion jam to the other. Remove the roast beef and melted cheese from the skillet with a spatula, and place on the bottom half of the baguette. Top the roast beef and Cheddar with the baby arugula, drizzle with the Apple Cider Gastrique and season with salt and pepper. Top the sandwich with the other half of the baguette, then slice the sandwich in half on the bias and enjoy!
  • Mix together the creme fraiche, horseradish, Worcestershire, garlic powder, onion powder, hot sauce and salt and pepper in a small mixing bowl. Keep refrigerated.
  • Bring the cider, vinegar, sugar and apple peels and cores to a boil in a medium saucepan. Reduce heat to medium-low and allow to simmer for 30 minutes. Strain off the apple peels and cores, then bring the liquid to a boil. Whisk in the xanthan gum and simmer for 2 minutes, then cool down the liquid. We serve the Apple Cider Gastrique in a squeeze bottle at room temperature.

3/4 cup chopped sweet red pepper
1/2 cup chopped red onion
1 teaspoon garlic salt
1 teaspoon Italian seasoning
8 to 10 ounces thinly sliced deli roast beef, julienned
2 cups finely shredded cheddar cheese
1 large egg white
1 tablespoon water

Steps:

  • Combine loaves of dough and shape into one ball. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place for 90 minutes., In a microwave-safe bowl, combine the red pepper, onion, garlic salt and Italian seasoning. Cover and microwave on high for 1 minute or until vegetables are tender., Punch dough down. On a lightly floured surface, roll into a 15x12-in. rectangle. Combine the beef, cheese and red pepper mixture; spread over the dough to within 1/2 in of edges. Roll up jelly-roll style, starting with a long edge; pinch seams and ends to seal. Place seam side down on a lightly greased baking sheet., In a small bowl, beat egg white and water; brush over dough. Cut a slit with a sharp knife in top of dough. 1 medium red onion, halved and thinly sliced
1 tablespoon, plus 2 teaspoons kosher salt, plus more to taste
6 tablespoons red wine vinegar
3/4 cup mayonnaise
3/4 cup sour cream
1/4 cup plus 2 tablespoons jarred grated horseradish (with liquid)
1/2 teaspoon grated lemon zest
Freshly ground black pepper
Hot sauce
6 Kaiser rolls
12 slices vine-ripened tomatoes
24 ounces freshly sliced rare roast beef
3 loosely packed cups watercress or arugula, or a combination of both

Steps:

  • In a small bowl, mix together the onion and 1 tablespoon of the salt. Set aside for 20 minutes. Rinse the onions with cold running water. Drain and squeeze to remove excess liquid. Combine the onions and the vinegar and marinate at least 30 minutes or up to 24 hours.
  • In a small bowl, mix together the mayonnaise, sour cream, horseradish, zest, and 2 teaspoons salt. Season generously with pepper and hot sauce to taste. Refrigerate the horseradish sauce for at least 30 minutes.
  • Preheat the broiler. Slice the rolls in half lengthwise. Using your hands, shallowly scoop out the inside of each half. Transfer the rolls to a baking sheet and arrange scooped-side up. I loved the idea, but the dough was way too salty and dry. I wanted a more Auntie Anne's-type bun. So I fooled around a bit, and this is what I came up with. The mustard sauce amounts are estimated, I usually just eyeball it, taste and change. I made these sandwiches at our Christmas and New Year's parties, and now my brother-in-law thinks we should make these every week.

1 1/4 cups warm water
1 tablespoon yeast
1/4 teaspoon yeast
3 3/4 cups all-purpose flour
3/4 cup powdered sugar
2 tablespoons powdered sugar
1 1/2 teaspoons salt
2 teaspoons vegetable oil
1/2 cup baking soda
2 cups warm water
1/4 cup butter, melted (optional)
kosher salt or pretzel salt
1 lb angus roast beef (the good kind that's pink in the middle)
2 small onions, sliced and caramelized
3 tablespoons Dijon mustard
2 tablespoons Kraft mayonnaise, lite
2 teaspoons yellow mustard
2 teaspoons smokey horseradish sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon pepper
1 dash white wine vinegar

Steps:

  • For the pretzels, dissolve the yeast in 1 1/4 cup warm water and let sit for a few minutes.
  • Combine flour, powdered sugar and salt in a large mixing bowl. Add the yeast mixture and the oil. Stir until the dough comes together and then turn out onto a lightly floured surface. Knead for at least 5 minutes until smooth and elastic. Place dough in a lightly oiled bowl, cover, and set in a warm place for about 45 minutes, or until dough has doubled in size.
  • Preheat oven to 425 and spray a baking sheet with non-stick spray.
  • Make the bath for the pretzels by combining the baking soda and 2 cups warm water. Stir until mostly dissolved.
  • Take dollops of dough and roll them into balls. They won't actually stay in perfect balls; they just need to be sort of rounded on top to make a bun. I made mine about 2" diameters and got about 40 out of the dough. Dip each ball into the baking soda bath, then blot on a paper towel just for a second to get rid of the drips. Place 12 on a sheet and sprinkle with the kosher or pretzel salt. Bake for 4 minutes, spin the pan around and bake for another 3-4 minutes or until golden brown. If desired, brush with melted butter.
  • When cooled, slice each roll in half to make the bun.
  • To make the mustard sauce, combine the dijon mustard, mayo, yellow mustard, horseradish, worchestershire, pepper and vinegar. Taste sauce and alter to your preferences.
  • Assemble sandwiches with sauce, roast beef, and caramelized onions. Buns can be made ahead of time and stored in an air-tight container. Once the sauce is on the bun, the soggy factor will kick in if stored, so only assemble what you plan to eat.
