Steps:

2 pounds fresh shallots, peeled, with roots intact
3 tablespoons sugar
3 tablespoons good red wine vinegar
1/2 teaspoon kosher salt

2 tablespoons chopped fresh flat-leaf parsley
Preheat the oven to 400 degrees F.

Steps:

Coarse salt and ground pepper
2 pounds shallots, peeled and halved, if large
2 teaspoons light-brown sugar
2 teaspoons balsamic vinegar
1 cup dry red wine
2 tablespoons Dijon mustard

  • Preheat oven to 500 degrees. Season beef with salt and pepper. Place in a large roasting pan; roast until golden brown, about 30 minutes.
  • Reduce oven temperature to 325 degrees. Place shallots around beef; roast until an instant-read thermometer inserted into thickest part of beef registers 130 degrees. For medium-rare, 1 to 1 1/4 hours more, turning shallots with tongs after about 30 minutes.

2 French baguettes, halved lengthwise
2 tablespoons Dijon mustard, or to taste
1 cup Roquefort cheese, crumbled
1 pound thinly sliced deli roast beef
½ cup cold heavy cream
1 ½ tablespoons finely shredded horseradish root
1 pinch salt and white pepper to taste

Steps:

  • Melt the butter in a skillet over medium heat. Stir in the sliced shallots; cook and stir until very tender and golden-brown, about 10 minutes. Season to taste with salt and black pepper. Set aside.
