1 large Russett or 2 smaller Yukon gold potatoes, peeled and quartered

6 quarts chicken stock
1 quart quartered potatoes
1 cup chopped chives

Poached eggs, optional
Hollandaise Sauce, optional

  • Preheat the oven to 300 degrees F. Season meat with salt and pepper and sear on all sides in a hot saute pan.
