4 oz. cream cheese, softened to room temperature ((I used light cream cheese, but any variety will work))
1 tablespoon mayonnaise ((I used light mayonnaise, but any will work))
1 tablespoon ketchup
¼ cup finely diced roast beef
¼ cup shredded cheddar cheese
1/8 teaspoon garlic powder

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together cream cheese, mayonnaise, and ketchup. Stir in roast beef, cheddar cheese, and garlic powder. Mix well and set aside.
  • Unroll the crescent roll dough and separate into triangles.
  • Spread each triangle with cream cheese mixture, leaving a border around the edge. Roll up to form crescent rolls.

2 (8 ounce) packages fat-free cream cheese, softened
3 ½ tablespoons prepared horseradish
3 tablespoons Dijon-style mustard
12 (12 inch) flour tortillas
30 spinach leaves, washed with stems removed
1 ½ pounds thinly sliced cooked deli roast beef
8 ounces shredded Cheddar cheese

Steps:

  • Beat the cream cheese, horseradish, and mustard together in a bowl until well blended.
  • Spread a thin layer of the cream cheese mixture over each tortilla. Arrange spinach leaves evenly over the tortillas. Place two slices of roast beef over the cream cheese. Sprinkle with Cheddar cheese, dividing evenly between tortillas. Starting at one end, gently roll up each tortilla into a tight tube. Wrap with aluminum foil or plastic wrap to keep the rolls tight. Refrigerate at least 4 hours.

½ cup butter
1 onion, finely chopped

1 ½ teaspoons Worcestershire sauce
1 pinch garlic powder, or to taste
2 teaspoons poppy seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

1/3 cup crumbled blue cheese (1 1/2 ounces), such as Roquefort or Maytag blue
1 pound thinly sliced rare roast beef
Kosher salt and freshly ground black pepper
1 bunch watercress
1 red bell pepper, stemmed, seeded, and cut into thin strips
1 yellow pepper, stemmed, seeded, and cut into thin strips

Steps:

  • Cream the butter and cheese with a fork in a medium bowl until evenly mixed together.
  • Lay the roast beef slices on a flat surface to make 16 rectangles, each about 5 by 8 inches. Depending on the size of the slices, it may be necessary to combine them, overlapping slightly along the sides. Season the meat with salt and pepper. Spread 2 teaspoons of the cheese mixture along the short end of the beef rectangle. Strip the leaves from a watercress sprig and scatter the leaves over the cheese, and then top with a few pieces of both red and yellow peppers. Roll the beef, enclosing the butter and vegetables, and continue rolling into a tight cylinder. Wrap snugly in plastic wrap. Repeat with the remaining ingredients. Refrigerate until chilled, at least 30 minutes.

8 slices deli roast beef, 1/8 inch
1 mushroom
1/2-3/4 cup broccoli, chopped small
1 garlic clove, minced
3 cups cooked mashed potatoes (thinned with a little milk or use roasted garlic instant mashed potatoes for 4)
1/4 cup romano cheese, grated
2 plum tomatoes, diced
1 1/2 tablespoons tomato paste
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
12 ounces beef gravy (homemade or jar)
2 tablespoons romano cheese, grated

Steps:

  • Spray a casserole pan (3 quart) with cooking spray.
  • Microwave on high the broccoli, mushroom and garlic about 1 1/2 minutes.
  • Blend together the gravy, tomato paste, tomatoes, oregano and basil; set aside.
  • Mix broccoli mixture and 1/4 cup of cheese with the mashed potatoes.
  • Put 1/4-1/2 cup potato mixture down the center of each roast beef slice,.
  • Roll up and place seam side down in prepared pan.
  • Pour gravy mixture over top.
  • Cover with foil.
  • Bake 25 minutes at 350°F.
  • Uncover, sprinkle with 2 tbps cheese.
  • Bake 5 minutes more until cheese melts.
  • Let stand 5 minutes before serving.

Pickle wedges, if desired

Steps:
