Although Risotto is a traditional Italian recipe, this is a delicious French recipe for braised rice, with a combination of rice and onions. It is wonderful paired with Burgundy white wine or dry white wine as suggested by the French Wine Guide.

RISOTTO

Steps:

  • For enough risotto to serve four, heat about 2 tablespoons of butter in a sauce pan. Add 1 cup of a round-grain rice such as Arborio or Carnaroli and stir the rice over medium heat. Add the broth, one cup at a time, until the rice has absorbed 3 cups of liquid. You should stir the risotto frequently as it cooks to get a good creamy texture. (If you like, replace 1/2 cup of the broth with 1/2 cup dry white wine.) For a saffron risotto, add a few threads of crushed saffron with the first cup of broth.
  • Once the rice is tender and creamy, pull it off the heat and add 2 tablespoon butter and 1/3 to 1/2 cup grated Parmesan cheese. Stir the risotto vigorously until the butter and cheese are blended in. Serve at once on heated plates.

Categories     dinner, weekday, side dish

Time 50m

Yield 4 servings

Number Of Ingredients 7

4 cups hot beef or chicken stock
1/2 cup uncooked wild rice, rinsed
2 tablespoons butter or olive oil
1/2 cup finely chopped onion
1 cup Italian arborio rice
Salt and freshly ground black pepper to taste
Grated Parmesan cheese

Steps:

  • Bring one-and-one-fourth cups of the stock to a boil in a small saucepan, add the wild rice, cover tightly and allow to cook until the rice is tender and nearly all the liquid has been absorbed, about 40 minutes.
  • While the wild rice is cooking, heat the butter or oil in a large, heavy saucepan. Add the onion and cook slowly until tender but not brown. Add the arborio rice and stir well.
  • Begin adding the remaining stock, half a cup at a time, stirring constantly and adding more stock as each portion is absorbed by the rice. After 20 to 25 minutes all the stock should have been added and the rice should be just tender. Remove from heat.
  • When the wild rice has finished cooking, fold it in along with any liquid remaining in the pan. Gently reheat the risotto if necessary, season to taste and serve at once with Parmesan cheese.

BROWN RICE RISOTTO WITH WINTER SQUASH

Brown Rice Risotto With Winter Squash image

Provided by Mark Bittman

Categories     dinner, main course

Time 45m

Yield 4 servings

Number Of Ingredients 11

Salt
1 cup short- or medium-grain brown rice
3 tablespoons olive oil or butter
1 medium onion or large shallot, chopped
Black pepper
About 2 cups winter squash in roughly 3/4-inch cubes
1/2 cup dry white wine or water
About 4 cups any stock (shrimp, chicken, lobster, vegetable, pork) or water
About 1 cup bite-size pieces of meat or shellfish (precooked is O.K.): sausage, pork, lobster, shrimp, chicken, etc.
1/2 cup grated Parmesan, optional
1/2 cup chopped fresh basil or parsley

Steps:

  • Bring medium pot of water to a boil and salt it. Stir in brown rice, adjust heat so that water bubbles steadily, and cook without stirring, until rice is swollen and half-tender, 10 to 15 minutes. Drain. (If you want to wait a bit before proceeding, spread the rice on a platter or sheet tray so it cools.)
  • Put oil in a large, deep skillet over medium heat. When it's hot, add onion or shallot and cook, stirring occasionally, until it softens, 3 to 5 minutes. Add rice and cook, stirring occasionally, until it is glossy and coated with oil, about 5 minutes. Sprinkle with salt and pepper, then stir in the squash; add the wine. Stir and let liquid bubble away.
  • Begin to add the stock, about ½ cup at a time, stirring after each addition and every minute or so. When the stock is just about evaporated, add more. Keep the heat medium to medium-high and stir frequently.
  • When rice is just about tender and mixture is creamy, stir in shellfish or meat and continue to cook, adding more liquid if necessary, until rice is tender. The final dish should be quite moist but not soupy. Add Parmesan if you're using it, then taste and add more salt or pepper (or both) if necessary. Garnish with basil or parsley and serve.

ROMANO RISOTTO WITH RADISHES

Romano Risotto with Radishes image

Risotto, the ultimate comfort food of Milan, heads south to sunny Rome in a revamp of a classic. Pecorino Romano-in place of the more traditional Parmigiano-Reggiano-brings a delectably briny tang, while crunchy radishes in a light vinaigrette provide a counterpoint to the creamy Arborio rice.

Provided by Andrea Albin

Time 35m

Yield Serves 8 (first course) or 6 (main course)

Number Of Ingredients 13

6 cups reduced-sodium chicken broth (48 fl ounces)
2 cups hot water
3/4 stick unsalted butter, divided
1 medium onion, finely chopped (1 cup)
3 garlic cloves, finely chopped
1 pound Arborio rice (2 1/2 cups)
2/3 cup dry white wine
1/2 cup grated Pecorino Romano
1 tablespoon white-wine vinegar
1 tablespoon extra-virgin olive oil
1 pound trimmed radishes, julienned
1 tablespoon finely chopped chives
Accompaniment: extra-virgin olive oil for drizzling

Steps:

  • Bring broth and water to a simmer in a 3-to 4-quart saucepan. Meanwhile, heat 3 tablespoons butter in a 4-to 5-quart heavy pot over medium heat until foam subsides, then cook onion, stirring occasionally, until just softened, about 5 minutes. Add garlic and cook, stirring occasionally, until softened, 6 to 8 minutes. Stir in rice and cook, stirring, 1 minute. Add wine and cook, stirring, until absorbed, about 1 minute.
  • Stir 1 cup simmering broth into rice and cook, stirring constantly and keeping at a strong simmer, until absorbed. Continue cooking and adding broth, about 1 cup at a time, stirring frequently and letting each addition be absorbed before adding next, until rice is just tender and creamy-looking but still al dente, 18 to 22 minutes. Thin with some of remaining broth if necessary (you will have some left over). Remove from heat. Stir in cheese, 1 teaspoon salt, 1/2 teaspoon pepper, and remaining 3 tablespoon butter.
  • Whisk together vinegar, oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Toss radishes with dressing and chives. Serve risotto topped with radishes.

Tips:

  • Use high-quality ingredients: The better the quality of your ingredients, the better your risotto will be. For the creamiest risotto, use a short-grain rice like Carnaroli or Arborio. A top quality vegetable broth will also make a difference.
  • Toast the rice: Toasting the rice before adding the liquid helps to develop its flavor and prevent it from becoming mushy.
  • Cook the risotto slowly and gradually add the liquid: Risotto is a labor of love and takes some time to make. Be patient and stir the risotto constantly to prevent it from sticking to the pan and burning.
  • Use a wooden spoon: A wooden spoon will help to prevent the risotto from sticking to the pan and becoming gummy.
  • Add the cheese and butter at the end: This will help create a creamy and flavorful risotto.
  • Serve the risotto immediately: Risotto is best enjoyed fresh out of the pan. If you need to hold it for a bit, keep it warm in a low oven or on a warm burner.

Conclusion:

With its creamy texture, rich flavor, and endless variations, risotto is a delicious and versatile dish that can be enjoyed for any occasion. Whether you're making a classic recipe or experimenting with new ingredients, these tips will help you create the perfect risotto every time.
