Time 45m

Yield 4

Number Of Ingredients 9

½ pound bacon, diced
5 cups chicken stock
2 tablespoons butter
½ onion, diced
4 cloves garlic, minced
1 ½ cups Arborio rice
2 tablespoons butter
¼ cup grated Parmesan cheese
salt and black pepper to taste

Steps:

  • Cook and stir the diced bacon in a large skillet over medium heat until browned, about 10 minutes. Drain the bacon and reserve.
  • Bring the chicken stock to a boil in a saucepan over high heat; reduce heat to low to keep the chicken stock hot.
  • Heat 2 tablespoons butter in a large, heavy-bottomed saucepan over medium-high heat. Add the onion and garlic; cook and stir until the onion begins to turn golden brown at the edges, about 2 minutes. Pour in the rice and stir until the rice is coated in butter and has started to toast, 2 to 3 minutes. Reduce heat to medium; stir in one-third of the hot chicken stock and continue stirring until the rice has absorbed the liquid and turned creamy. Repeat this process twice more, stirring constantly. Stirring in the broth should take 15 to 20 minutes in all. When finished, the rice should be tender, yet slightly firm.
  • Remove the risotto from the heat and stir in the remaining 2 tablespoons of butter, the Parmesan cheese, and the reserved bacon. Season to taste with salt and pepper before serving.

RISOTTO WITH TURNIPS AND BACON

Risotto With Turnips and Bacon image

Creamy risotto great for using up turnips and greens you get bombarded with in the fall. Originally from Gourmet Magazine with several tweaks. Serves 2 as a main course or 4-6 as a side dish.

Provided by Aramis83

Categories     One Dish Meal

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 7

3 slices bacon
1 small onion, chopped
2 medium turnips, peeled & diced into 1/4-inch pieces (about 1/2 pound total)
1 bunch turnip greens, cut into 1/4-inch wide slices & stems chopped (optional)
3 1/2 cups chicken broth
3/4 cup arborio rice
1/4 cup parmesan cheese, freshly grated

Steps:

  • In a 3-quart heavy saucepan cook bacon over moderate heat until crisp and golden. Transfer with a slotted spoon to paper towels to drain. Set aside. Reserve 1 tablespoon fat in pan.
  • In a small saucepan bring broth to a simmer and keep at a bare simmer.
  • Heat reserved bacon fat over moderately high heat until hot but not smoking and sauté onion, stirring, until just beginning to soften. Stir in turnips (and greens if using) and rice and sauté, stirring constantly, 1 minute.
  • Stir in 1 cup simmering broth and cook, stirring constantly and keeping at a strong simmer, until absorbed. Continue simmering and adding broth, about 1/2 cup at a time, stirring constantly and letting each addition be absorbed before adding next, until rice is tender and creamy-looking but still al dente, about 18 minutes total.

1 large onion, chopped
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup Arborio rice
3 cups low-salt chicken broth, plus 1/4 to 1/2 cup

3/4 cup diced cooked chicken
3 medium curly kale leaves, stemmed and chopped into 1-inch pieces (about 3 cups)
1 roasted carrot, chopped
1 roasted parsnip, chopped
1 roasted shallot, chopped
1/2 cup freshly grated Parmesan

Steps:

  • Place a rack in the center of the oven. Preheat the oven to 425 degrees F.

BUTTERNUT SQUASH AND BACON RISOTTO

Butternut Squash and Bacon Risotto image

The classic risotto technique applies here, though with a frugal twist. I blended the cooking liquid for the butternut squash and about half of the diced cooked squash itself to produce my vegetable broth. The rest of the diced squash is folded in near the end of cooking. A generous helping of smoked bacon gives the result main-dish heft. This risotto does not need a final dollop of butter or a dusting of cheese.

Provided by Florence Fabricant

Categories     dinner, main course

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 9

1 large butternut squash, about 3 pounds, peeled, cored and diced in 1/2-inch pieces
Salt
6 ounces thick-sliced smoked bacon
1 cup finely chopped onion
1 teaspoon ground sage
1 1/2 cups arborio rice
1/2 cup dry white wine
Ground black pepper
1 tablespoon fresh sage leaves, slivered

Steps:

  • Place squash in a saucepan with 4 cups salted water. Bring to a boil and simmer until tender, about 10 minutes. Drain, reserving the cooking liquid. Set aside half the diced squash. Place the rest, with 2 cups of the cooking liquid, in a blender or food processor and process until smooth. Return this thin squash purée and the rest of the cooking liquid to the saucepan in which the squash was cooked. You should have about 5 cups.
  • Fry half the bacon. Set aside. Chop the rest. Place chopped bacon in a 3-quart sauté pan over medium-low heat. Cook, stirring, until bacon barely starts to color. Add the onion, continue cooking until onion is translucent. Stir in half the ground sage, then the rice. Cook, stirring on medium heat, a few minutes until the grains of rice start to look chalky. Stir in the wine and cook until most has evaporated.
  • Bring the saucepan of squash liquid to a simmer and start to add it to the rice, about half a cup at a time, stirring and adding more as it is absorbed. After about 15 minutes, the rice should almost be al dente. Before adding the final portion of liquid, fold in the reserved diced squash, the remaining ground sage and salt and pepper to taste.
  • Divide risotto among 4 to 6 plates, crumble the reserved fried bacon and top each portion with some bacon and slivered sage.

TURNIPS FRIED WITH BACON

Turnips Fried With Bacon image

Always in search of low carb side dishes, I threw this together one night for dinner. Also works well for breakfast with eggs and bacon or sausage or ham.

Provided by Sooz Cooks

Categories     Vegetable

Time 25m

Yield 6 serving(s)

Number Of Ingredients 4

4 turnips, medium sized cubed
4 slices bacon, diced
1 tablespoon onion, chopped (to taste)
salt and pepper, to taste

Steps:

  • Place cubed turnips in a covered microwave-proof dish along with 1 tablespoons of water. Microwave on high for 7 minutes. Remove and drain well.
  • In a non-stick skillet on medium high heat, cook the bacon until they just begin to turn brown.
  • Add onion and saute until onion becomes translucent.
  • Stir in turnips and saute for another 5 - 7 minutes or until the turnps are cripsy and a bit brown on the outside.

Tips:

  • Use high-quality rice: Arborio or Carnaroli rice are the best choices for risotto, as they hold their shape and creaminess well.
  • Toast the rice before cooking: This helps to release the starch and create a more flavorful risotto.
  • Use a good quality stock: The stock you use will greatly affect the flavor of your risotto, so be sure to use a flavorful stock that you enjoy.
  • Cook the risotto slowly and stir constantly: This will help to prevent the rice from sticking to the pot and will also help to release the starch and create a creamy risotto.
  • Add the ingredients in stages: Don't add all of the ingredients at once, as this can make the risotto too thick or soupy. Instead, add the ingredients in stages, starting with the vegetables, then the rice, then the stock, and finally the cheese and butter.
  • Season to taste: Add salt and pepper to taste, and adjust the other seasonings as desired.

Conclusion:

Risotto is a delicious and versatile dish that can be made with a variety of ingredients. With a little practice, you can easily make a delicious risotto at home. So next time you're looking for a comforting and flavorful meal, try making a risotto with turnips and bacon. You won't be disappointed!
