RISOTTO WITH ASPARAGUS

Risotto with Asparagus image

Provided by Food Network Kitchen

Time 50m

Yield 6 servings

Number Of Ingredients 14

2 bunches thick asparagus (about 2 pounds)
1 sprig fresh thyme or lemon thyme
4 tablespoons unsalted butter
1 large shallot, diced
2 cups arborio rice
Kosher salt
1/3 cup dry white wine
2 teaspoons grated lemon zest
Freshly ground pepper
1/3 cup grated parmesan cheese
2 teaspoons fresh lemon juice
1 head Bibb lettuce, cut into strips
8 ounces robiola or taleggio cheese, thinly sliced
Extra-virgin olive oil, for drizzling

Steps:

  • Peel the bottom third of the asparagus stalks with a vegetable peeler. Snap each stalk where it breaks naturally; reserve 4 of the peeled bottoms for crostini (below). Thinly slice 6 asparagus bottoms and place the rest of the bottoms in a saucepan with 8 cups water and the thyme to make asparagus broth; bring to a simmer.
  • Heat 2 tablespoons butter in a saucepan over medium heat. Add the shallot and cook, stirring, until translucent, about 2 minutes. Add the rice and cook, stirring, until glossy, about 1 minute. Add 1 1/4 teaspoons salt. Pour in the wine and stir until absorbed. Stir in 1/2 cup of the asparagus broth until absorbed (use a ladle to add the broth, keeping the solids in the pan). Continue to add broth in 1/2-cup increments, stirring constantly and allowing the liquid to be absorbed before adding more, about 10 minutes. (You should have about half the broth left.) Stir in the sliced asparagus bottoms and the lemon zest. Add the remaining broth, 1/2 cup at a time, until the rice is just tender, 5 to 8 more minutes.
  • Meanwhile, place the asparagus tips in a large skillet, cover with water and season with salt and pepper. Simmer over medium-high heat until just tender, about 5 minutes.
  • Add the remaining 2 tablespoons butter, the parmesan and lemon juice to the risotto. Stir in the lettuce, remove from the heat and season with salt. Divide among bowls, top with the robiola and season with pepper. Drizzle the asparagus tips with olive oil and spoon over the risotto.

RISOTTO WITH ASPARAGUS AND SUN-DRIED TOMATOES

Risotto With Asparagus And Sun-Dried Tomatoes image

I love risotto and am always trying new versions. This one incorporates two of my favorites - asparagus and sun-dried tomatoes. It is simple enough, but as with any risotto, you do a lot of stirring. I usually add more asparagus and tomatoes than called for here.

Provided by Vicki Butts (lazyme)

Categories     Rice Sides

Time 40m

Number Of Ingredients 9

1 lb asparagus, trimmed
6 c liquid (include the cooking water from the asparagus and chicken broth)
2 Tbsp butter
1 small onion, finely chopped
2 c arborio rice
2 sun-dried tomato halves, drained or reconstituted
1/4 c parmesan cheese, grated
2 Tbsp fresh parsley, chopped
pepper, to taste

Steps:

  • 1. Blanch the asparagus in a large skillet or pan of rapidly boiling water 2-3 minutes or until vivid green. Remove the asparagus from the pan and reserve the cooking water. Measure the cooking water and add stock to equal 6 cups and pour into a saucepan set over low heat. Allow to come to a low simmer.
  • 2. Cut the asparagus into 1-inch pieces. Melt the butter in a large pot set over medium heat and add the chopped onion, rice, and all the asparagus except the tips. Stir this mixture until the rice and vegetables are coated and the onion becomes translucent.
  • 3. Add 1/2 cup of the simmering broth and cook, stirring until the liquid is absorbed. Continue adding the broth slowly, 1/2 cup at a time, stirring until it is absorbed. Work slowly and do not add more broth until the previous 1/2 cup is fully absorbed. Work until all the broth is absorbed. Taste the risotto; it should be firm but not hard and the mixture creamy. If it is still tough, you may need to add more broth (bring to a simmer first).
  • 4. Off the heat, gently stir in the reserved asparagus tips along with the remaining ingredients. Serve immediately.

Provided by pkhemmerich

Categories     One Dish Meal

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 lb large shrimp, peeled and deveined
1 lb fresh asparagus
1/2 cup sun-dried tomato, sliced
1 shallot, minced
1 garlic clove, minced
1 cup white wine
1 teaspoon olive oil
3 tablespoons butter
1 1/2 cups arborio rice
1/2 cup parmesan cheese, grated
1 teaspoon red pepper flakes
4 -5 cups shrimp broth (or vegetable broth)
1/2 lemon, juice of
salt and pepper

Steps:

  • Blanch the asparagus and shock in ice water to stop the cooking process. Once cool, cut the asparagus into bite sized pieces and set aside.
  • In 3-quart skillet, add the butter, olive oil, shallot, and garlic over low-medium heat. Gently saute for 2 minutes.
  • Add arborio rice. Saute ingredients until the rice begins to turn translucent, leaving a white dot in the middle.
  • Once the rice begins to turn translucent, add the white wine and sun-dried tomatoes, then saute on medium for 2 minutes.
  • Slowly (1/4 cup at a time) add stock to the rice. Once the rice has soaked up the majority of the liquid in the skillet add more. This is a slow process, and can easily take 30 minutes (or more) to go through all the liquid. Warning: If you add too much liquid too quickly you may end up with a risotto that is not as creamy as it should be.
  • When you've reached the point where you've added 3 1/2 cups of stock to the rice, add the asparagus, parmesan cheese, and red pepper flakes.
  • Once the rice has become a nice, creamy, and tender texture (sample the rice, and it should be tender, without any crunch but still firm), add your shrimp with the last 1/4 cup of stock, and cook until shrimp are thoroughly cooked, but tender, and almost all liquid is absorbed. This should take 3-5 minutes. Also at this time, add the juice of one half of a lemon.
  • Salt and pepper to taste.

1 lb asparagus, trimmed
6 cups chicken broth, please see the note below

1 small onion, finely chopped
2 cups arborio rice
2 sun-dried tomatoes packed in oil, drained or 2 sun-dried tomatoes, reconstituted
1/4 cup parmesan cheese, grated
2 tablespoons fresh parsley, chopped
pepper

Steps:

  • NOTE:.
  • Zaar won't let me enter this in the ingredients section, so the 6 cups of chicken broth should actually consist of the cooking water from blanching the asparagus, and then adding enough chicken broth to measure the 6 cups.
  • Blanch the asparagus in a large skillet or pan of rapidly boiling water 2-3 minutes or until vivid green. Remove the asparagus from the pan and reserve the cooking water. Measure the cooking water and add stock to equal 6 cups and pour into a saucepan set over low heat. Allow to come to a low simmer.

Risotto With Peas And Sun-Dried Tomatoes image

Provided by Moira Hodgson

Categories     weekday, side dish

Time 45m

Yield 4 servings

Number Of Ingredients 9

1/2 cup sun-dried tomatoes, packed in olive oil
6 cups chicken or vegetable stock
2 tablespoons unsalted butter
3 scallions, minced
1 1/2 cups arborio rice
2/3 cup of dry white wine
Coarse salt and freshly ground pepper
1 cup fresh (or frozen) peas
1/3 cup of grated Parmesan cheese

Steps:

  • Chop the sun-dried tomatoes. Bring the chicken or vegetable broth to simmer.
  • Heat the butter in a large skillet and saute the scallions until they are soft. Add the rice and saute it, stirring, until it turns opaque.
  • Add the wine and let it reduce. Add one-half cup of hot chicken stock and mix it in so the rice absorbs it. As the liquid is absorbed, add more. Season with salt and pepper to taste. Continue adding liquid and stirring for about 20 minutes all told, or until the rice is al dente.
  • When the rice is almost cooked, add the peas and tomatoes and stir thoroughly. The liquid should be absorbed and the rice creamy. Stir in the cheese, cover for a minute or two and then serve with extra cheese passed separately.

Tips:

  • Choose the right rice: Arborio rice is the traditional choice for risotto, as it has a high starch content that helps create a creamy texture. Carnaroli and Vialone Nano are also good options.
  • Toast the rice: Before adding the liquid, toast the rice in a little butter or oil until it is translucent. This helps to develop its flavor and prevent it from becoming mushy.
  • Add the liquid gradually: Add the liquid to the rice in small increments, stirring constantly. This helps the rice to absorb the liquid evenly and cook through.
  • Cook the risotto until it is creamy and al dente: The risotto should be cooked until it is creamy and al dente, with a slight bite to it. This usually takes about 18-20 minutes.
  • Stir in the vegetables and cheese: Once the risotto is cooked, stir in the vegetables and cheese. This will add flavor and texture to the dish.
  • Serve immediately: Risotto is best served immediately, as it will start to lose its creaminess as it cools.

Conclusion:

Risotto is a delicious and versatile dish that can be made with a variety of ingredients. With a little practice, you can easily master the art of making risotto at home. Whether you are cooking it for a special occasion or a weeknight meal, risotto is sure to impress your friends and family.
