Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

28 ounces chicken stock
1 tablespoon olive oil
1/2 onion, finely chopped
1 cup arborio rice
1 cup white wine
1/2 teaspoon saffron
1 tablespoon butter
1/4 cup parmigiano-reggiano cheese, grated plus shavings for garnish (optional)

Steps:

  • Bring stock to a low simmer in a medium pot.
  • Heat olive oil in a medium saucepan over medium heat for 1 minute.
  • Cook onion until translucent, about 3 minutes.
  • Add rice and a pinch of salt. Saute until rice is translucent, 1 to 2 minutes.
  • Add wine and saffron; bring to a simmer, stirring, until rice has absorbed most of wine.
  • Add 2 ladles of stock to rice; simmer, stirring, until rice has absorbed most of stock. Continue adding stock, allowing rice to absorb it before adding the next ladleful.
  • Cook until rice is 'al dente' and mixture is a little loose. Stir in butter. Turn off heat. Stir in grated cheese. Cover and let sit 2 minutes.
  • Divide among 4 bowls. Garnish each with cheese shavings, if desired.

Tips:

  • Use high-quality ingredients: The better the quality of your ingredients, the better your risotto will be. Look for short-grain rice such as Carnaroli or Arborio rice, and use a flavorful broth or stock.
  • Toast the rice: Toasting the rice before adding the liquid helps to develop its flavor and prevent it from becoming mushy.
  • Cook the risotto slowly: Risotto is a slow-cooked dish, so be patient and don't rush the process. Stir the risotto frequently to prevent it from sticking to the pan and to help release the starch, which will give the risotto its creamy texture.
  • Use the right amount of liquid: The amount of liquid you use will depend on the type of rice you are using. Carnaroli rice absorbs more liquid than Arborio rice, so you may need to add more broth or stock.
  • Stir in the butter and cheese at the end: Once the risotto is cooked, stir in the butter and cheese. This will help to create a creamy and flavorful sauce.

Conclusion:

Risotto al zafferano is a delicious and versatile dish that can be enjoyed as a main course or a side dish. With its creamy texture, rich flavor, and vibrant color, it is sure to impress your guests. So next time you are looking for a special dish to make, give risotto al zafferano a try.
