1 cup whole milk ricotta cheese
1/2 cup fresh basil leaves, chopped
1/2 teaspoon kosher salt
1/4 teaspoon kosher salt, plus more for the pasta
1 pound rigatoni pasta
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
1 large or 2 small heads broccoli, chopped into small florets
1 clove garlic, peeled and chopped
One 25-ounce jar marinara sauce
1 cup freshly grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • For the topping: Add the ricotta, basil, and salt to a small bowl. Stir together with a rubber spatula. Set aside.
  • For the pasta: Bring a large pot of water to boil. Season well with salt and cook the rigatoni for 5 minutes. Drain well, reserving 1/2 cup pasta water.

heads broccoli, stems peeled and cut into 2 inch pieces. Florets cut into bite sized pieces.
extra virgin olive oil
cloves fresh garlic, minced
rigatoni pasta
salt as desired

Steps:

  • Put a large pot of generously salted water over a high flame. Add the broccoli and once the pot is boiling add in the pasta. Cook according to the package instructions minus 2 minutes. The the broccoli will be very fork tender. When the pot has about 2 minutes to go put a large skillet over a medium flame and heat the oil. Add the garlic and sauté until it just begins to turn golden, about 30 seconds. Very quickly using a large strainer scoop the pasta and broccoli out of the boiling water and add it to the garlic and oil. Turn the flame up to high and toss well as the broccoli begin to break down. If the pan appears dry add 1/2 cup of the pasta water at a time until you reach the desired consistency. Serve immediately and add cheese at your own risk! :)

1/4 c olive oil, extra virgin
1 pinch red pepper flakes ( i like it spicy so i use a big pinch)
8 oz rigatoni pasta
1/2 c freshly grated pecorino romano cheese or parmigiano-reggiano cheese

Steps:

  • 1. Trim the broccoli and cut it into bite sized pieces.
  • 2. 2 Bring 4 quarts of water to a boil in a large pot. Add the broccoli and salt to taste. Cook for 5 minutes. Scoop out the broccoli with a small sieve. Reserve the cooking water in the pot.
  • 3. Pour the olive oil into a skillet large enough to hold all the ingredients. Add the garlic and red pepper, cook over medium heat for about 2 minutes, or until the garlic is lightly golden. Add the broccoli and a pinch of salt. Cook, stirring occasionally for 10 minutes, or until the broccoli is soft.
  • 4. Meanwhile, bring the water back to a boil. Add the rigatoni and cook, stirring frequently, until the pasta is not quite tender. Scoop out about 1 cup of the cooking water and set it aside. Drain the rigatoni and add it to the skillet with the broccoli. Add the reserved cooking water and cook, stirring often for 5 minutes or more.

4 tablespoons butter (or margarine)
1/4 cup olive oil
12 garlic cloves (minced or pressed)

1 cup vegetable broth (or chicken broth)
1 bunch fresh basil, chiffonaded
salt and pepper
1/2 cup parmeggiano parmigiano-reggiano cheese (or a blend of parm. and romano, or vegan cheese topping)

Steps:

  • Cook pasta according to directions.
  • Melt butter together with olive oil in large skillet with cover or dutch oven (ideally large enough to hold all of your ingredients together).

1 large bunch broccolini, trimmed into 1 1/2-inch pieces
3 tablespoons olive oil
1 pound sweet Italian sausage, casings removed.
1 large onion, thinly sliced
2 tablespoons tomato paste
1/4 teaspoon red pepper flakes
4 cloves garlic, thinly sliced
1/2 cup fresh parsley, chopped
1/2 cup grated Pecorino Romano cheese, plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente, adding the broccolini for the last 4 minutes of cooking. Reserve 2 1/2 cups of the cooking water, then drain the pasta and broccolini and set aside.
  • Meanwhile, heat a large Dutch oven over medium heat and add the olive oil. When the oil is hot, add the sausage and cook, breaking it up with a wooden spoon, until browned, about 4 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.

1/4 cup dry white wine
1 cup chicken broth

1/3 cup freshly grated parmigiano-reggiano cheese, plus additional for serving
2 tablespoons butter

  • Return the pan to the heat and whisk in the white sauce.

  • Reduce the heat to low and simmer for about 7 minutes, or until it is reduced by half Stir in the butter, salt and pepper.

  • Return the pasta to the pasta pot, add the broccoli sauce mixture and the Parmigiano-Reggiano, toss to coat well.
