EGGPLANT ROLLATINI WITH SPINACH & RICOTTA



Eggplant Rollatini with Spinach & Ricotta image

These Eggplant Rollatini are stuffed with spinach and ricotta for a lighter and absolutely delicious dinner, they can also be prepped in advance to make weeknight meals even easier and tastier!

2 eggplants ((aubergine))
15 oz (400g) canned chopped tomatoes
1 shallot
2 cloves garlic
1/2 tbsp tomato paste
1/2 tsp oregano
1 pinch nutmeg
8.5 oz (250g) Ricotta
8.5 oz (1 1/8 cup/240g) spinach
1 ball mozzarella
1 tbsp parmesan
salt and pepper (to season)

Steps:

  • Preheat the oven to 180°C/350F/. Cut the tops off the eggplant/aubergine then cut into slices around 1cm / 1/4 inch thick. Place on a lined baking tray, brush with a little olive oil (2 tbsp) and bake for 20 minutes until tender. Set aside to cool.
  • Meanwhile add half tbsp of olive oil to a frying pan and add the spinach, stir so it doesn't burn until completely wilted. Remove from the pan and let cool.
  • To make the tomato sauce, add a tbsp of olive oil to the frying pan. Add the finely chopped shallot and garlic to the pan.
  • Sauté for 1 minute then add the chopped tomatoes. Rinse out any excess tomato from the can with 1/4 cup (60ml) water and add it to the sauce alongside the tomato paste, oregano and season with salt and pepper. Let the sauce reduce and simmer for 15 minutes.
  • Squeeze out any extra moisture from the wilted spinach then finely chop and add to a large bowl. Add the ricotta, parmesan, nutmeg and a pinch of salt and pepper. Mix everything together until thoroughly combined.
  • To assemble the eggplant roll-ups, add a spoonful of ricotta mixture (about a heaped tbsp) in the centre of a slice of eggplant then roll it up. Repeat with the rest of the eggplant and ricotta mixture.
  • Add 3/4 of the tomato sauce to the bottom of a baking dish. Arrange the eggplant roll-ups in the baking dish then top with the remaining sauce. Top with mozzarella then bake in the oven for 20-25 minutes until the mozzarella is golden and melted and everything is heated right through.

½ cup vegetable oil, divided
4 cloves garlic, minced
1 (28 ounce) can crushed tomatoes in puree
1 (10 ounce) can tomato sauce
2 tablespoons Italian seasoning
1 teaspoon salt

½ teaspoon ground black pepper
2 cups plain dried bread crumbs
1 cup all-purpose flour
2 eggs
¼ cup heavy cream
2 large eggplants, peeled and sliced lengthwise into 1/4 inch slices
1 (15 ounce) container ricotta cheese
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
¾ cup chopped fresh parsley
1 teaspoon fresh parsley, for garnish

Steps:

  • Heat 1 tablespoon of the olive oil in a large saucepan over medium heat. Add garlic, and cook until fragrant and lightly browned. Pour in the crushed tomatoes and tomato sauce. Season with Italian seasoning, salt, sugar, and pepper. Simmer covered over medium-low heat for 30 minutes, stirring occasionally. Remove from heat and set aside.
  • Preheat the oven to 400 degrees F (200 degrees C). In a large shallow dish, stir together the bread crumbs and flour. In a separate dish, whisk together the eggs and cream with a fork.
  • Heat the remaining olive oil in a large skillet over medium-high heat. Dip each eggplant slice into the egg mixture, then coat with breadcrumbs. Fry each slice until golden brown in the hot oil, turning once. Drain on paper towels.
  • Spread a thin layer of the marinara sauce in the bottom of a 9x13 inch baking dish. In a large bowl, stir together the ricotta cheese, mozzarella cheese, Parmesan cheese and parsley. Spread 2 to 3 tablespoons of the cheese mixture onto one side of each slice of eggplant. Roll up, and place in the baking dish seam side down. Spoon the remaining tomato sauce over the rolls. Cover the baking dish with a lid or aluminum foil.
  • Bake for 30 minutes in the preheated oven. Garnish with additional chopped parsley before serving if desired.

1/2 teaspoon salt
3 cups fresh spinach leaves
SAUCE:
1 tablespoon olive oil
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes
1 can (15 ounces) tomato puree
3 tablespoons minced fresh basil or 3 teaspoons dried basil
2 teaspoons sugar
1 teaspoon dried oregano

FILLING:
1 carton (15 ounces) reduced-fat ricotta cheese
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400°. Cut eggplants lengthwise into eighteen 1/4-in.-thick slices; reserve leftover pieces. Line 2 baking sheets with foil. Coat both sides of eggplant slices with cooking spray; place in a single layer on prepared pans. Sprinkle eggplant with 1/2 teaspoon salt. Bake until just pliable (do not soften completely), 10-12 minutes; cool slightly. , Meanwhile, in a large saucepan, bring 1/2 in. of water to a boil. All-star, easy eggplant rollatini recipe, made with a lighter cheese filling, basil pesto and fresh parsley.

2 eggplants
Salt
Extra virgin olive oil
2 cups Store-bought Marinara sauce
2 eggs (beaten)
1 cup part-skim ricotta cheese
1/2 cup part-skim shredded Mozzarella (more for later)
3 tbsp grated Parmesan
2 tbsp basil pesto (homemade or store-bought, more for later)
1 cup chopped fresh parsley leaves

Steps:

  • Slice eggplants length-wise into 1/4-inch thin slices (it's easier to do this using a mandolin slicer like this one. affiliate link) You should have about 12 slices of similar size (reserve end pieces that are shorter or odd-shaped for another use).
  • Sprinkle eggplant slices with salt and set aside on paper towel for 20 minutes. This will help the eggplant sweat out any bitterness. Pat dry. Rinse with water, then dry again.
  • Heat oven to 375 degrees F.
  • Brush a large baking sheet with extra virgin olive oil. Arrange eggplant slices in one layer on baking sheet. Brush the tops of the eggplant slices with more extra virgin olive oil. Bake in heated oven for 8 minutes or so until soft enough to fold (do not overcook.) Remove from oven and set aside briefly to cool. (Leave the oven on for the rollatini)
  • Meanwhile, prepare the filling. In a bowl, add eggs, ricotta, Mozzarella, grated Parmesan, basil pesto, and fresh parsley. Mix until well-combined.
  • Spread about 3/4 cup marinara sauce on the bottom of a 9 1/2" x 13" baking dish.
  • Spoon about 2 tbsp of the filling onto one end of each eggplant slice, and spread. Starting from the short end, roll up eggplant slices tightly and arranged on prepared baking dish.
  • Top eggplant rollatini with the remainder of the marinara sauce, more basil pesto, and a sprinkle of mozzarella. Bake in heated oven for 30 minutes or until the eggplant rollatini are fully cooked and tender.
  • Remove from oven and let sit for 10 minutes or so before serving.

1 cup vegetable oil

4 eggs

2 cups all-purpose flour
1 -2 teaspoon seasoning salt
1 cup grated parmesan cheese
black pepper
5 large eggs, slightly beaten
4 cups fresh breadcrumbs
15 -18 eggplants, slices 2 medium eggplants (sliced lenghwise 1/4- inch thick, can cut a little larger than 1/4-inch)
2 cups mozzarella cheese, grated
2 cups ricotta cheese
1 1/4 cups grated parmesan cheese
1 egg yolk, slighty beaten
black pepper (to taste)
seasoning salt (to taste, I use seasoned salt) or white salt (to taste, I use seasoned salt)
1 teaspoon dried basil (rubbed between fingers to release the flavors)
4 cups cups pasta sauce (or more if needed)
parmesan cheese (for topping or can use grated mozzarella cheese)

Steps:

  • Set oven to 350°F.
  • Spray three baking sheets, and one 13 x 9-inch baking dish with non stick cooking spray.
  • Place flour in a shallow dish.
  • In another dish place the slightly beaten eggs.
  • In another dish mix together breadcrumbs with 1 cup Parmesan cheese (you should have three separate dishes).
  • Season eggplant slices with salt and pepper.
  • Coat each slice with flour, then in eggs, then in the breadcrumb mixture.
  • Arrange the eggplant slices in a single layer on baking sheets.
  • Bake the eggplant slices in three batches until the coating is golden, about 30 minutes (turning after 15 minutes) cool on the sheets.
  • In a bowl combine ricotta cheese, 2 cups grated mozzarella cheese, 1-1/4 cups Parmesan cheese, 1 egg yolk and 1 teaspoon dried basil; mix well to combine then season with salt and black pepper to taste (if you are a garlic-lover then you may add in 1/2 teaspoon garlic powder if desired).
  • Spread about 3-4 tablespoons ricotta filling evenly on the eggplant slices.
  • Starting at the short end, roll up the slices with the filling inside.
  • Arrange the eggplant slices seam-side down into prepared baking dish.
  • At this point you can cover and refrigerate the eggplant slices for up to 24 hours.
  • Set oven to 350°F.
  • Spoon the tomato sauce over the rolled slices, and sprinkle with about 1 cup grated Parmesan cheese.
  • Bake uncovered until the rolls are heated through and the mozzarella cheese inside the eggplant rolls melts (about 20-22 minutes).

1 large globe eggplant, sliced lengthwise about 1/4-inch thick
Kosher salt
2 tablespoons raw walnut halves and pieces
1 cup part-skim ricotta
1 clove garlic, minced
2 teaspoons minced fresh mint leaves, plus more whole leaves for garnish
1 date or 1 prune, finely chopped
1 lemon, juiced
Extra-virgin olive oil

Steps:

  • Place a cooling rack over a baking sheet. Lay the eggplant slices on the rack, generously salting each slice (about 1/4 teaspoon per slice). Place another baking sheet on top of the eggplant and weigh it down with a few cans. Let them sit 30 minutes. Flip the eggplant slices, sprinkle with more salt, weigh down again and let them sit for another 30 minutes. (This draws out the bitter juices.) Meanwhile, toast the walnuts.
  • Preheat the oven to 350 degrees F. Spread the walnuts on a small baking sheet and pop into the oven until the walnuts give off their nutty aroma and deepen in color, about 5 minutes. When they are cool enough to touch, chop them finely.
  • Make the ricotta filling: Push the ricotta through a sieve into a medium bowl. This gives the cheese a light, airy texture. Add the toasted walnuts, garlic, mint, date, half the lemon juice, a pinch of salt and a swirl of olive oil. Stir together, taste for seasoning and then set aside.
  • Rinse the eggplant slices well and pat them dry. Warm a grill pan over moderately-high heat. Brush the eggplant slices with olive oil on one side; place the oiled-side down on the hot griddle and brush the other side. Cook until browned, about 2 minutes, then flip and cook another 2 minutes.
  • To assemble the rolls, place a couple of tablespoons of filling at one of end of a slice of eggplant. Roll and place on a plate seam-side down. Top the eggplant rolls with the remaining lemon juice, a swirl of extra-virgin olive oil and the reserved mint leaves, torn over the dish. Serve hot or at warm temperature.

Delicious and pretty. An old Gourmet recipe. Depending on the availability of the ingredients, this dish has the potential to be ultraquick, low cal and even vegetarian. In Italy the besciamella (cream sauce) is such a common ingredient that it is available in cartons ready-made and low cal (by Parmalat). Low fat ricotta is available. Precooked spinach is available in the deli department. And I use leftover meatloaf for the ground beef and onions. It is wonderful using SaraFish's recipe #33921. The only thing that takes a bit of time and calories is the preparation of the eggplant, but that may be available for you pregrilled in the deli section. You may have vegetable spray, too, which we don't have here. I made this the other day to great reviews, and the stuffing and assembly took barely five minutes!

1/4 cup vegetable oil, approximately
1/4 cup unsalted butter
3 tablespoons flour
1 1/4 cups milk, scalded
1/2 bay leaf (optional)
salt and pepper, to taste
1/4 cup onion, minced
1 tablespoon butter
1/4 lb lean ground beef
1 cup ricotta cheese
1/2 cup spinach, cooked, squeezed and minced
1/3 cup parmesan cheese, freshly grated
2 tablespoons cream (optional)
1/4 teaspoon nutmeg
3 tablespoons parmesan cheese, freshly grated
2 tablespoons fresh parsley, minced

Steps:

  • Cut the eggplant, trimmed and peeled, lengthwise into 1/4-inch slices, arrange in a colander, sprinkle with salt, and let them drain for about an hour to eliminate the bitter juices. Rinse and pat dry.
  • Preheat the oven to 375°F.
  • For the besciamella, melt 1/4 cup butter over moderate heat, stir in the flour, and cook the roux over low heat, stirring, for three minutes. Remove the pan from the heat, add the hot milk in a stream and whisk until the mixture is thick and smooth. Add the optional 1/2 bay leaf and salt and pepper to taste. Simmer to thicken to coat a spoon, 5-10 minutes, and discard the bay leaf.
  • For the stuffing, cook the onion in a small skillet in a bit of butter until softened, add the ground beef, breaking it up with a spoon, and cook until it is no longer pink. Stir in the ricotta, spinach, 1/3 cup parmesan cheese, nutmeg and salt and pepper to taste. Add a bit of cream to reach the desired consistency -- I've not needed it.
  • For the assembly and final cooking, heat some of the vegetable oil in a large skillet over moderately high heat, add the eggplant slices in batches, and cook until softened and golden, about 2 minutes per side. Transfer to paper towels to drain. When cool enough to handle, put about 2 tablespoons of the stuffing on the narrow end of each eggplant slice, roll up and arrange seam-side down in a greased baking dish large enough to hold all the rolls in a single layer. Nap the rolls with the besciamella, sprinkle with 3 tablespoons parmesan cheese and bake in the upper third of the preheated oven for 15 minutes, or until browned and lightly bubbling. Sprinkle the rolls with the minced fresh parsley.

2 tbsp olive oil
500g spinach
250g tub ricotta
grating of nutmeg
350g jar tomato sauce
4 tbsp fresh breadcrumb
4 tbsp parmesan (or vegetarian alternative)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Brush both sides of the aubergine slices with oil, then lay on a large baking sheet. Bake for 15-20 mins until tender, turning once.
  • Meanwhile, put the spinach in a large colander and pour over a kettle of boiling water to wilt. Cool, then squeeze out the excess water, so that it is dry. Mix with the ricotta, nutmeg and plenty of seasoning.
  • Dollop a spoonful of the cheesy spinach mix in the centre of each aubergine slice, fold over to make a parcel and lay, sealed-side down, in an ovenproof dish. Pour over tomato sauce, sprinkle with breadcrumbs and cheese, and bake for 20-25 mins until golden and piping hot.

Had this for the first time at a take-out pizza and pasta place in southern California. We all loved it so much that we came up with our own version that is just as good as the take-out one. This has become an all-time favorite in our house. Serve with your favorite tomato sauce, cream sauce, or other topping sauce. We serve this over spaghetti noodles, then top with favorite sauce sprinkled with cheese. Or just eat as they are straight from the oven.

1 large eggplant, ends trimmed
2 teaspoons sea salt, or as needed
1 cup all-purpose flour
3 eggs, beaten
1 cup dried bread crumbs
vegetable oil for frying, or as needed
2 cups ricotta cheese
½ cup grated Romano cheese
1 tablespoon minced garlic
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish with butter.
  • Slice eggplant into 1/4-inch thick slices lengthwise; discard the end slices with skin. Lay the eggplant slices on paper towels and sprinkle both sides generously with sea salt. Let slices drain for 30 minutes; rinse and pat dry with paper towels.
  • Place flour, eggs, and bread crumbs in separate shallow bowls. Dip each eggplant slice in flour and shake off excess; dip into egg and then into bread crumbs.
  • Heat vegetable oil in a large skillet over medium heat and fry the slices until golden brown, about 5 minutes per side. Drain on paper towels, place on baking sheets, and refrigerate eggplant for 10 minutes.
  • Mix ricotta cheese, Romano cheese, and garlic in a bowl; season to taste with salt and black pepper. Place a cooled eggplant slice onto a work surface and mound 1/3 to 1/2 cup of cheese mixture in the center; roll up slice and place seam side down into the prepared baking sheet. Repeat with remaining slices and cheese filling.
  • Bake rolls in the preheated oven until filling is hot, about 25 minutes.

2 tablespoons canola oil
1 (1 1/2 lb) eggplants, peeled and sliced lengthwise (1/4-inch thick)
1/2 cup chopped onion
1 (16 ounce) can diced tomatoes
1/4 cup reduced-fat mozzarella cheese
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon garlic powder
1 cup tomato sauce
1 cup fat-free ricotta cheese (or reduced fat)
1 cup coarsely chopped spinach

Steps:

  • Preheat the oven to 350 degrees.
  • Brush 1 tablespoon of the oil on the sliced eggplant, and roast it until tender, about 15 minutes.
  • Saute the onion in the remaining 1 tablespoon of the oil until tender, about 3-4 minutes.
  • Add the tomatoes (with the juice), and simmer for 15 minutes.
  • In a separate bowl, mix the ricotta, spinach, mozzarella, basil, oregano, and garlic.
  • Add salt and peper to taste.
  • Lightly coat a baking dish with cooking spray.
  • Spoon the cheese mixture on each slice of the eggplant, and roll up like a jelly roll.
  • Place the eggplant in the dish.
  • Continue until all the eggplant is used.
  • Top with the tomato sauce, and bake for 30 minutes.

This is really a tasty dish. If you can't get eggplant, or your garden is full of zucchini that can also be used as a substitute for the eggplant. Both make an excellent side dish or light meal.

2 medium eggplants
1/2 teaspoon salt
cold water
flour, with mixture of
Italian spices
2 eggs, beaten
olive oil
1/2 lb mozzarella cheese, sliced
1 lb ricotta cheese
1 -2 tablespoon fresh parsley, chopped fine
1 dash if freshly fine ground black pepper
2 cups marinara sauce
grated romano cheese or parmesan-romano cheese mix

Steps:

  • Wash the eggplants, remove the stems,peel and slice lengthwise.
  • Soak the eggplants in the salt and enough water to cover the eggplant. Keep them immersed with a heavy plate for about 20 minute to 1/2 hours The longer the better. This takes out the bitterness.
  • Preheat the olive oil, but be careful it is not too hot. Olive oil will splatter.
  • Dry the eggplant with paper towels.
  • Dredge the eggplant first into flour, then dip into the egg.
  • Fry until golden brown and drain on paper towels.
  • In the middle of each place a slice of mozzarella, and a spoon of ricotta cheese.
  • Roll up the eggplant and place seam side down in a greased shallow baking dish.
  • Top with marinara sauce.
  • Bake in a 350* oven for 20-30 minute.
  • Garnish with grated cheese and some fnely chopped parsley.

Delicious and easy vegetarian recipe. I char-grill fresh sliced eggplant using my George Foreman grill, but you can buy it ready made from the deli. I also find it easier sometimes to omit the thyme leaves and lemon rind and use instead a bottled dried mix of lemon, basil and thyme from the supermarket.

1 tablespoon olive oil
1 yellow onion, finely chopped
1 (425 g) can chopped tomatoes
1 tablespoon tomato paste
1 tablespoon balsamic vinegar
500 g fresh ricotta cheese
1/4 cup milk
1/4 cup finely chopped chives
2 tablespoons lemon thyme, leaves
1 lemon, rind finely grated
20 slices chargrilled eggplants
salt and pepper

Steps:

  • Preheat oven to 200 degrees celcius and lightly grease a square baking dish.
  • Heat oil in a fry pan over medium heat.
  • Add onion and garlic, cook for about 3 minutes.
  • Add tomatoes, tomato paste, balsamic vinegar and salt and pepper to taste.
  • Bring to the boil then reduce heat and simmer for about 20 minutes or until sauce is thick.
  • Combine, ricotta, milk, chives, thyme and lemon rind (add salt and pepper if required).
  • Spread ricotta mixture evenly over slices of eggplant, then roll up lengthways.
  • Spoon sauce into baking dish and top with eggplant rolls.
  • Cover and bake for approximately 25 minutes or until sauce is bubbling.
