RICH VEAL BROTH

Categories     dinner, project, soups and stews, appetizer

Time 1h45m

Yield 4 cups

Number Of Ingredients 8

1 large tomato, cored and halved
1 large onion, halved
1 tablespoon vegetable oil, optional
4 cups water
2 pounds veal bones, split and cut into 2-inch pieces
1 medium-size carrot (about 3 ounces), peeled and diced
1 rib celery (about 2 ounces), peeled and diced
1 leek (4 ounces), trimmed, rinsed and diced

Steps:

  • If desired, preheat conventional oven to 450 degrees. Brush tomato and onion with vegetable oil and place in a roasting pan along with the bones. Bake for about 40 minutes, shaking the pan occasionally. Remove from oven and place tomato and onion in a 5-quart casserole with tight-fitting lid. Place roasting pan on top of the stove. Stir 1 cup of the water into roasting pan to loosen all the brown bits from the bottom, and bring to a boil over moderate heat. Remove from heat and pour mixture into the casserole.
  • Combine all remaining ingredients in the casserole. Cook, covered, at 100 percent power in a 650- to 700-watt oven for 40 minutes.
  • Remove from oven and uncover. Strain broth through a fine sieve. If not using at once, pour broth into containers and store, covered, in the refrigerator or freezer. If you wish to skim the fat off, refrigerate so the fat rises to the surface and hardens, then remove with a large spoon.

KITTENCAL'S HOMEMADE DEEP RICH TURKEY STOCK/BROTH

Kittencal's Homemade Deep Rich Turkey Stock/Broth image

Roasting/browning the turkey bones and vegetables firstly in the oven will create a more intense deep rich stock I would not even think of making stock without using this method and you will see the difference for yourself after you try this stock --- I use this stock in so many recipes I even make gravy with it and you will use this for so many things also, it is wonderful to have handy in the freezer, to thaw just microwave for a couple of minutes or refrigerate overnight -- serving amounts are listed for a 12-13 pound turkey and about 4 quarts of water, you may use a larger turkey with more water just make certain to use enough water to cover the carcass and veggies --- if possible don't discard all the extra bones from the legs, thighs and wings and add into the pot along with the carcass the more bones the better!

Tips:

  • Use high-quality ingredients: The quality of your ingredients will have a big impact on the flavor of your broth. Choose veal bones that are fresh and have been properly butchered. You should also use fresh vegetables and herbs.
  • Roast the bones before simmering: Roasting the bones before simmering will help to develop their flavor and give the broth a richer color. Make sure to roast the bones until they are browned but not burnt.
  • Add plenty of vegetables and herbs: Vegetables and herbs will help to add flavor and depth to your broth. Some good choices include carrots, celery, onions, leeks, garlic, thyme, rosemary, and bay leaves.
  • Simmer the broth for a long time: The longer you simmer the broth, the more flavor it will have. Simmer the broth for at least 4 hours, but 6-8 hours is ideal.
  • Strain the broth before using: Once the broth is finished simmering, strain it through a fine-mesh sieve or cheesecloth to remove any bones, vegetables, or herbs. This will give you a smooth, clear broth that is ready to use.

Conclusion:

Veal broth is a delicious and versatile ingredient that can be used to make a variety of dishes, including soups, stews, and sauces. By following these tips, you can make a rich and flavorful veal broth that will elevate your cooking to the next level.
