RICH VANILLA CHIP CAKE
This is a wonderfully easy rich and moist bundt cake. It is so full of flavor that no one has ever guessed it is so easy and starts with a cake mix. A friend of mine says she uses the recipe for a blueberry(leave out the chips) bundt cake and it is VERY good as well. I do believe this is/was originally a McCormicks recipe because...

Had saved this recipe and finally tried it; every time I've made it, it has been a hit! I do make it with the toffee bits instead of the chocolate chips. It's moist and oh, so tasty! I will be making it for my daughters' birthday cake (one cake, two daughters born two days apart--different years, tho!!!) this year, and promise...

Steps:
- 1. Combine all ingredients except chips in a large bowl with mixer on low, just to moisten. Scrape the bowl. Beat on medium speed for two minutes.
- 2. Stir in chips by hand. Pour into greased and floured 12-cup Bundt pan.
- 3. Bake in 350 oven 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Invert cake onto wire rack. Cool completely. Drizzle with Vanilla Butter Glaze or dust with powdered sugar.
- 4. Vanilla Butter Glaze Mix 3 tablespoons butter, melted, 2 1/4 cups confectioner's sugar, 3 tbsp. water and 1 1/2tsp Pure Vanilla Extract until smooth. Let stand 3 minutes or until thickened.
Tips:
- Use room temperature ingredients: This will help the batter mix together more smoothly and evenly.
- Cream the butter and sugar together until light and fluffy: This will help incorporate air into the batter, resulting in a lighter, more tender cake.
- Add the eggs one at a time, beating well after each addition: This will help prevent the batter from curdling.
- Be careful not to overmix the batter: Overmixing can develop the gluten in the flour, resulting in a tough, dense cake.
- Fold in the vanilla chips gently: This will help prevent them from sinking to the bottom of the cake.
- Bake the cake in a preheated oven: This will help ensure that the cake bakes evenly.
- Let the cake cool completely before frosting: This will help prevent the frosting from melting.
Conclusion:
This rich vanilla chip cake is the perfect dessert for any occasion. It's easy to make, delicious, and sure to be a hit with everyone who tries it.
