1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. 1 lb ground beef (lean)
1 lb turkey or 1 lb pork
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce (I use dark)
1 teaspoon dried basil
8 slices not thin cheese
1 cup yogurt
1 tablespoon ranch dip, dry mix or 2 minced garlic cloves
1 (8 ounce) can condensed cream of mushroom soup or 1 (6 ounce) can chopped mushrooms, with liquid
2 tablespoons mayonnaise
1/2 cup milk

Steps:

  • Preheat over to 350°F.
  • Mix together the two ground meats.
  • Add worcester and soy sauces and basil to the meat and mix.
  • Pat the meat mixture into a 9 x 13 casserole dish. Leave a one inch space around the edges. You are not making a loaf, more like a 2 inch thick big meat patty.
  • Cut the cheese slices in half and poke them into the meat all over at equal spaces.

3 medium onions, sliced thin
6 cloves garlic, peeled and chopped
3 large ripe tomatoes, cored and chopped
1 cup bread crumbs
1 1/2 pounds lean ground beef
1 large egg
1 teaspoon dried oregano
2 tablespoons finely minced Italian parsley
Pinch crushed red pepper flakes
Salt and freshly ground black pepper to taste
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Place the onions in a heavy skillet, preferably nonstick. Cover and cook on low heat about 10 minutes, until the onions are soft and just beginning to brown. Stir in the garlic and cook a minute or so longer. Remove one-third of this mixture from the pan and set aside.
  • Add one-third of the tomatoes to the pan and cook about five minutes, until the excess liquid has evaporated. Transfer mixture to food processor and process to chop very fine.

Add the reserved parsley and season to taste with crushed red pepper, salt and freshly ground black pepper. Set this sauce aside until you are ready to serve the meatloaf, then reheat the sauce and serve it alongside.

1/2 cup finely chopped onion
1/2 cup diced celery
1/2 cup butter, cubed
6 slices bread, toasted, cubed
1 large egg, beaten
1/2 cup water
1/2 teaspoon poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
MEAT LOAF:
1 large egg, beaten
2/3 cup evaporated milk
1/4 cup dry bread crumbs
