Provided by Midwest Maven

Categories     Long Grain Rice

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

1 large onion, peeled and cut into chunks
10 garlic cloves, peeled
1/2 cup fresh parsley leaves
1/2 cup fresh basil leaf
3 tablespoons corn oil
2 cups long grain rice
salt and pepper, to taste
3 cups chicken stock

Steps:

  • Combine the first 4 ingredients in a food processor and puree.
  • Put the oil in a large saucepan over medium heat and add the rice, stirring for a few minutes.
  • Stir in all but 1 tablespoon of the onion mixture, add the salt and pepper, and cook for a couple minutes stirring.
  • Add the stock and bring to a boil.
  • Cover and turn heat to medium/low cooking until liquid is absorbed, about 15-20 minutes.
  • Stir in the reserved tablespoon of the onion mixture and serve.

Tips:

  • Use a heavy-bottomed pot or Dutch oven to cook the rice. This will help to evenly distribute the heat and prevent the rice from burning.
  • Rinse the rice thoroughly before cooking. This will remove any excess starch and help the rice to cook evenly.
  • Add the bay leaf and onion to the pot along with the rice and water. The bay leaf will add a subtle flavor to the rice, while the onion will add a touch of sweetness.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 18-20 minutes, or until the rice is tender and all of the liquid has been absorbed.
  • Once the rice is cooked, remove the pot from the heat and let it stand for 5 minutes before fluffing it with a fork.

Conclusion:

This simple yet flavorful rice dish is a great side dish for a variety of meals. It is also a good source of carbohydrates, fiber, and vitamins. The addition of the bay leaf and onion gives the rice a unique flavor that will surely please everyone at the table.
