1 1/2 cups hard wheat berries
3/4 cup chopped walnuts
2 stalks celery, finely chopped

2 tablespoons lemon juice

Steps:

  • In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool. Toast the walnuts in a medium dry skillet over medium-high heat until fragrant, 2 to 3 minutes.
  • In a large bowl, combine the wheat berries, walnuts, celery, dried cherries, scallions, parsley, olive oil and lemon juice. Season, to taste, with salt and pepper.

1 cup long-grain white rice

1 tablespoon vegetable oil
1 small onion, finely chopped
1 teaspoon mild curry powder
Pinch cayenne pepper
1/2 cup basmati rice, rinsed
Kosher salt
1/2 cup lite (reduced-fat) coconut milk
2 tablespoons raisins or currants
1/2 cup loosely packed fresh cilantro leaves
Juice of 1/2 lemon
2 tablespoons salted and roasted cashews, chopped

Steps:

  • Soak the wheat berries overnight in enough water to cover by 1 inch. Drain. Combine the wheat berries with 1 3/4 cups water in a small saucepan; bring to a boil, adjust heat to medium-low, cover, and simmer until the wheat berries are tender but still toothsome, about 50 minutes.
