2 tablespoons maraschino cherry juice

Steps:

  • In a large heavy saucepan, combine the rice, milk, sugar, butter and salt. Bring to a boil over medium heat. Cook for 15 minutes or until thick and creamy, stirring occasionally. 1 1/2 cups frozen unsweetened tart red cherries (from 1-lb bag)

Steps:

  • In 2-quart saucepan, heat milk, rice, 1/3 cup sugar and the salt to boiling over medium-high heat. Reduce heat to medium-low. Simmer uncovered 40 to 45 minutes, stirring frequently, until rice is tender and mixture is thickened.

1/2 cup dried cherries that have been rehydrated in 1/4 cup warm brandy

1 cup heavy cream

Steps:

Steps:

140g pudding rice
50g caster sugar
4 tbsp custard powder
1 tsp vanilla bean paste
1 litre whole milk
170ml double cream
150g frozen cherries (frozen sour cherries work well)
50g caster sugar
½ lemon, juiced

  • Heat the oven to 180C/160C fan/gas 4 and butter a 1.5-litre baking dish. Put the pudding rice, sugar, custard powder, vanilla, milk and cream in a bowl and whisk to combine. 1 quart whole milk
6 tablespoons sherry
