5 cups cubed cooked chicken
3 cups cooked rice
1-1/2 cups diced green pepper
1-1/2 cups sliced celery
1 can (20 ounces) pineapple tidbits, drained
3/4 cup mayonnaise
4 teaspoons orange juice
2 teaspoons vinegar
1 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon garlic salt
1 can (15 ounces) mandarin oranges, drained
1 cup slivered almonds, toasted

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, combine mayonnaise, orange juice, vinegar, salt, ginger and garlic salt. Pour over salad and toss. Refrigerate. Just before serving, fold in the oranges and almonds.

4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon all-purpose flour
1 tablespoon canola oil
2 cans (8 ounces each) unsweetened pineapple chunks
1 teaspoon cornstarch
1 tablespoon honey
1 tablespoon reduced-sodium teriyaki sauce or reduced-sodium soy sauce
1/8 teaspoon pepper
Hot cooked rice

Steps:

  • Flatten the chicken to 1/4-in. thickness. Place flour in a large shallow dish; add chicken and turn to coat. , In a large skillet, brown chicken over medium heat in oil until juices run clear, 3-5 minutes on each side. Remove and keep warm. Drain pineapple, reserving 1/4 cup juice. (Discard remaining juice or save for another use.) , In a small bowl, combine cornstarch and reserved juice until smooth. Gradually add to skillet. 3 tablespoons olive oil, divided
½ teaspoon paprika

1 pound boneless, skinless chicken breast, cut into strips
1 red bell pepper, cubed
1 bunch scallions, trimmed and sliced into 1/2-inch lengths
1 (12 ounce) can pineapple chunks, drained and juice reserved
1 tablespoon cornstarch

  • Combine soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and let marinate while preparing the remaining ingredients.

1 tablespoon soy sauce
1 teaspoon olive oil, plus
2 tablespoons olive oil
4 teaspoons minced garlic
4 teaspoons minced peeled fresh ginger
12 ounces boneless skinless chicken breast halves or 12 ounces chicken tenders, cut crosswise into ½ inch wide strips
2 3/4 cups water
1 1/2 cups basmati rice or 1 1/2 cups long-grain rice
6 tablespoons fresh lime juice
1 cup cubed peeled pineapple
1 kiwi, peeled,cubed
3/4 cup thinly sliced green onion
1/2 cup chopped red bell pepper
4 large curly lettuce leaves

Steps:

  • Mix 2 tsps soy sauce, 1 tsp oil, 2 tsps garlic and 1 tsp ginger in medium bowl.
  • Add chicken and toss to coat.

1/2 cup apple cider vinegar
3 tablespoons brown sugar
3 tablespoons finely chopped fresh cilantro leaves
2 tablespoons finely chopped fresh parsley leaves
1 cup vegetable oil
3 3/4 cups water
1/2 cup wild rice
1 cup white rice
1 red onion, peeled and diced small
1/2 fresh pineapple, peeled, cored, and diced medium
Salt and freshly ground black pepper
8 small fresh cilantro sprigs, for garnish

Steps:

  • Prepare dressing by whisking together vinegar, brown sugar, cilantro, and parsley in a bowl. Add oil in a thin stream while whisking constantly. Set aside to let flavors integrate.
  • Bring 3 3/4 cups water to a boil. Stir in wild rice, cover pot and let cook undisturbed for 15 minutes. Add white rice to the same pot and cook covered for another 20 minutes.
