Categories     Side Dish

Time 40m

Number Of Ingredients 10

1 tablespoon salted butter
½ cup finely diced onion
½ cup finely diced celery
¼ cup finely diced carrot
2 cups chicken broth (or sub with vegetable broth)
1 bay leaf
1 cup uncooked long-grain white rice
¼ cup chopped fresh parsley
¼ cup sliced almonds, toasted
Kosher salt and pepper, to taste

Steps:

  • Melt the butter in a large skillet (that has a lid) or Dutch oven over medium heat. Add the rice and cook, stirring regularly, until the rice is browned - about 2-3 minutes. Add the onion, celery and carrot; cook, stirring regularly, until the vegetables start to soften - about 4 minutes.
  • Add salt and pepper, to taste. If you're using salted chicken broth, you probably won't need too much extra salt. If you're using low-sodium or homemade unsalted broth, you may need up to ½ - ¾ teaspoon of salt.
  • Add the broth to the skillet with the rice and vegetables. Add the bay leaf; bring the liquid to a simmer, then reduce the heat to low, cover the skillet, and let the rice simmer for 18-20 minutes. Once the liquid has been absorbed and the rice is tender, turn off the heat, discard the bay leaf, fluff the rice with a fork, and stir in the fresh parsley and toasted almonds.

Yield Serves 2

Number Of Ingredients 7

1 small onion, chopped fine
1 tablespoon vegetable oil
1 large garlic clove, minced
4-ounce can mild green chiles, drained and chopped
1/2 cup long-grain white rice
3/4 cup low-salt chicken broth
1 scallion green, sliced thin, if desired

Steps:

  • In a small heavy saucepan cook onion in oil over moderately low heat, stirring, until softened. Stir in garlic, chiles, and rice and cook, stirring occasionally, until rice is translucent, about 1 minute. Add broth and salt and pepper to taste and bring to a boil. Reduce heat to low and cook pilaf, covered, until liquid is evaporated and rice is tender, about 20 minutes. Fluff pilaf and stir in scallion.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the pilaf will be. Look for fresh, flavorful vegetables and a good quality cheese.
  • Rinse the rice before cooking: This will help to remove any starch and prevent the rice from becoming sticky.
  • Toast the rice before adding the liquid: This will help to give the rice a nutty flavor and prevent it from becoming mushy.
  • Use a flavorful broth: Chicken broth, vegetable broth, or even water can be used to make pilaf. However, using a flavorful broth will add more depth of flavor to the dish.
  • Add vegetables and spices: Vegetables such as corn, chiles, and onions can be added to the pilaf for extra flavor and nutrition. Spices such as cumin, chili powder, and paprika can also be added to taste.
  • Let the pilaf rest before serving: This will allow the rice to absorb all of the flavors and become fluffy.

Conclusion:

Rice pilaf is a versatile dish that can be served as a side dish or main course. It is a great way to use up leftover rice and vegetables, and it is a delicious and easy-to-make dish that is sure to please everyone at the table.
