1 tbsp olive oil
1 large onion , thinly sliced
250g baby cooking chorizo , sliced
4 garlic cloves , crushed
1 tsp smoked paprika
400g can chopped tomato
250g basmati rice
600ml stock
1 lemon , zest peeled off in thick strips, plus wedges to serve
2 fresh bay leaves
small bunch parsley , chopped

Steps:

  • Heat the oil in a large pan with a lid. Add the onion and cook for 5-8 mins until soft and golden. Push to the side of the pan and add the chorizo. Cook until lightly browned and some of the oils are released into the pan.
  • Add the garlic and paprika, then the tomatoes. Bubble over a medium heat for 5 mins, then add the rice, stock, lemon zest and bay leaves. Stir everything together well and bring to the boil. Put the lid on and cook over a very low heat for 12 mins.
  • Turn off the heat and leave to sit and steam for 10-15 mins. Stir through the parsley and serve with lemon wedges for squeezing over.

1 10 oz. can Rotel diced tomatoes and chilies
1 cup chicken broth (or any broth)
1 medium sweet bell pepper (seeded and chopped)
1 small yellow onion (chopped)
½ cup uncooked rice
1 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. salt
1/4 tsp. ground black pepper
3/4 lb. chorizo sausage links (sliced into 1/2 inch pieces (about 4 links))

Steps:

  • Place a wide, high-sided skillet or pot over high heat. Add the beans, Rotel, broth, bell pepper, onion, rice, chili powder, cumin, salt, and black pepper. Stir to combine. Cover the pot.
  • Bring liquid to a boil, then reduce to a simmer. Cook for 10 minutes, stirring occasionally.

250g pack small cooking chorizo sausages, halved lengthways
1 onion , halved and sliced
2 garlic cloves , chopped
1 tsp sweet smoked paprika
250g basmati rice
500ml hot chicken stock (or gluten-free alternative)
2 roasted peppers from a jar, chopped
395g can cherry tomato
85g pitted green or Kalamata olive

Steps:

  • Heat a large frying pan on a medium-high heat. Add the sliced chorizo halves, cut-side down, and cook until the oil starts to come out and they begin to crisp at the edges.
