ASIAN RICE NOODLE SALAD

Asian Rice Noodle Salad image

The best thing about this salad is how it comes together in no time at all. Asian rice noodles generally cook more quickly than wheat noodles and with the addition of the precut coleslaw mix the prep time is very minimal.

Tips:

  • Use day-old rice noodles for the best texture. Fresh rice noodles can be too soft and mushy, while day-old noodles will have a slightly chewy texture that holds up well in the salad.
  • Soak the rice noodles in cold water for at least 30 minutes before cooking. This will help to soften the noodles and make them more pliable.
  • Cook the rice noodles according to the package directions. Be sure not to overcook the noodles, as they will become too soft and mushy.
  • Rinse the rice noodles with cold water immediately after cooking. This will help to stop the cooking process and prevent the noodles from sticking together.
  • Prepare the vegetables and herbs while the rice noodles are cooking. This will save you time and make it easier to assemble the salad.
  • Use a sharp knife to slice the vegetables and herbs. This will help to prevent them from tearing or bruising.
  • Mix the salad dressing in a separate bowl before adding it to the salad. This will help to ensure that the dressing is evenly distributed throughout the salad.
  • Toss the salad gently to combine all of the ingredients. Be careful not to overmix the salad, as this can cause the noodles to break.
  • Serve the salad immediately, or chill it for later. The salad can be served at room temperature or chilled. If you are chilling the salad, be sure to bring it to room temperature before serving.

Conclusion:

This rice noodle salad is a delicious and refreshing dish that is perfect for a summer meal. The combination of flavors and textures in this salad is sure to please everyone at your table. The salad is also very easy to make, and it can be prepared in advance. This makes it a great option for busy weeknights or potlucks.
