1 1/2 cups uncooked rice
4 tablespoons margarine
1 1/2 cups water
1 1/2 cups apple juice
3/4 cup raisins
1 apple, peeled and chopped
3/4 cup sugar
1 dash cinnamon
5 eggs, well beaten

Steps:

  • Cook rice with the following 3 ingredients.
  • Add the rest of the ingredients to the cooked rice and mix well.
  • Put in well greased cassarole dish.
  • Bake for 1 hour at 350.
  • You can substitute 3 cups of leftover cooked rice if you would like.
  • If it is a little dry, just add about a 1/4 cup of apple juice to the mixture.

1/3 cup raisins
2 apples
1 large egg
1 pinch salt
1/2 cup granulated sugar
1 cup cooked short-grain white rice
6 tablespoons butter, room temperature
1 tablespoon apricot jam
2 tablespoons ground almonds
1 tablespoon granulated sugar

Steps:

  • Preheat oven to 350ºF. Butter a deep baking dish; set aside.
  • Peel and shred apples. In a medium bowl, beat together egg, salt and 1/2 cup sugar. Stir in raisins, shredded apple, rice, 4 Tablespoons of the butter, jam and almonds.
  • Pour into buttered dish; dot with remaining 2 Tablespoons butter. Sprinkle with 1 Tablespoon sugar. Bake 40 minutes; serve hot.

3 -5 tablespoons onion soup mix

  • Bake about 1 hour at medium heat.

2 c cooked rice (1 cup raw)
4 eggs
3/4 c sugar
1/2 c butter
1 tsp vanilla
4 c milk
1/2 c raisins
1 apple (optional)

Steps:

  • 1. Cook rice for 20 minutes. Strain. Beat in eggs. Add sugar, vanilla, milk and raisins.
  • 2. Grease 9 X 13 inch baking dish with 4 tbsp. butter. Pour mixture into baking dish. Dot mixture with 4 tbsp. butter. Slice apple thinly and place on top of mixture (optional)
  • 3. Bake at 350 degrees for 1 hour.

3 cups cooked rice
4 tablespoons butter, melted
1 1/2 heavy cream
3/4 cup raisins
1 large banana, sliced
1 mango, diced
1 apple, peeled and chopped
1/8 teaspoon salt
5 eggs, well beaten
3/4 cup sugar
1 tablespoon cinnamon
coconut flakes

Steps:

  • Add all of the ingredients and mix well.
  • Put in well greased casserole dish.
  • Cover and bake for for 1 hour at 350°F, mixing half way through.
  • Top with additional cinnamon, sugar, and coconut flakes to taste last 15 minutes (uncovered).

Tips:

  • Use medium-grain or short-grain rice for the best texture. Long-grain rice will not hold together as well.
  • Rinse the rice thoroughly before cooking to remove the starch and prevent it from becoming sticky.
  • Use a heavy-bottomed pot or Dutch oven to cook the rice. This will help to distribute the heat evenly and prevent the rice from burning.
  • Bring the rice and water to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until all of the water has been absorbed and the rice is tender.
