Curry Rice Indienne With Raisins & Almonds image

I love curried rice and the addition of raisins and almonds sounds wonderful. This recipe is taken from the "Joy of Eating" cookbook.

2 cups chicken broth
1 cup long grain rice
1 tablespoon oil
salt and pepper, to taste
1 teaspoon curry powder (or to taste)
1 small onion, chopped
1 teaspoon oil
1/4 cup golden raisin, plumped in orange juice
1/4 cup almonds, toasted and chopped
1/4 cup chives, minced

Steps:

  • Stir together the first 5 ingredients in a saucepan. Cover pan and simmer mixture over low heat until liquid is absorbed and rice is tender, about 30 minutes. Meanwhile, saute onion in oil until tender. Add onion and remaining ingredients (except chives) into rice and toss well. Sprinkle top with minced chives.

2 Tbsp butter
1 c long grain rice, uncooked
2 tsp curry powder
2 c chicken broth
2/3 c golden raisins
1/3 c celery, chopped
1/3 c green onions, chopped
1/3 c green pepper, chopped
1 Tbsp butter, melted
2 Tbsp chutney
2 Tbsp pimento, diced
2 Tbsp blanched almonds, chopped
1 Tbsp brown sugar
1 Tbsp cider vinegar
1/2 tsp salt

Steps:

  • 1. Melt 2 tablespoons butter in a medium saucepan. Add rice and curry powder; cook over low heat 5 minutes, stirring occasionally. Add chicken broth; bring to a boil. Cover, reduce heat, and simmer 13-15 minutes or until rice is tender and liquid is absorbed.
  • 2. Saute raisins, celery, green onions, and green pepper in 1 tablespoon melted butter in a small skillet until vegetables are tender. Add chutney and remaining ingredients; stir well.
