Rice and Black Beans (Rice Cooker) image

A very simple, cheap, filling side or main dish. I make this in my dorm room, all my friends come running at the smell and are delighted at the taste. It costs me about $2.25 to make. For more heat, use Hot Ro-tel.

Tips:

  • Soaking the beans overnight: Soaking the black beans overnight helps to reduce the cooking time and makes them more digestible. If you don't have time to soak them overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Rinsing the beans: Before cooking, rinse the black beans thoroughly to remove any dirt or debris.
  • Using a rice cooker: A rice cooker is a convenient way to cook black beans. Simply add the beans, water, and seasonings to the rice cooker and turn it on. The rice cooker will automatically cook the beans until they are tender.
  • Cooking the beans on the stovetop: If you don't have a rice cooker, you can cook the black beans on the stovetop. Add the beans, water, and seasonings to a large pot and bring to a boil. Then, reduce the heat to low and simmer for 1-2 hours, or until the beans are tender.
  • Adding seasonings: You can add a variety of seasonings to your black beans to taste. Common seasonings include salt, pepper, garlic powder, onion powder, and cumin.
  • Serving the beans: Black beans can be served as a side dish, in soups, salads, burritos, or tacos. They can also be used to make dips, spreads, and hummus.
