Time 55m

Yield 4

Number Of Ingredients 10

bread crumbs
4 skinless, boneless chicken breast halves
2 tablespoons olive oil, or more to taste
2 cups cooked white rice
2 cups ranch dressing
1 (10.75 ounce) can cream of celery soup
1 cup shredded mozzarella cheese
½ cup slivered almonds
1 cup shredded Cheddar cheese
1 cup crushed potato chips, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).

  • Heat olive oil in a skillet over medium-high heat. Cook chicken in hot oil to brown completely, 3 to 5 minutes per side.
  • Spread rice into the bottom of a 13x9-inch baking dish. Arrange browned chicken breasts atop the rice.
  • Mix ranch dressing, celery soup, mozzarella cheese, and almonds together in a bowl; pour over the chicken and rice, assuring the chicken is covered completely. Sprinkle Cheddar cheese over the ranch dressing mixture and top with crushed potato chips.
  • Bake in preheated oven until golden brown on top and the chicken is no longer pink in the center, 30 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

CURRIED CHICKEN AND BROCCOLI CASSEROLE

Curried Chicken and Broccoli Casserole image

This chicken and broccoli casserole is my 13-year-old son's favorite dish and the one he requests for every one of his birthdays. It is very good and combines the creamy texture of the cheese sauce with the crunchy texture of the corn flakes. It is a standby meal and easy to make, freeze, and bake at a later date. You can freeze it up to 6 months. If frozen, bake uncovered for 1 hour.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the casserole will taste. Choose high-quality rice, cheese, and almonds.
  • Cook the rice properly: The rice should be cooked until it is tender but still has a slight bite to it. Overcooked rice will make the casserole mushy.
  • Use a variety of cheeses: A combination of cheeses will give the casserole a more complex flavor. Try using a combination of cheddar, Parmesan, and mozzarella.
  • Don't skimp on the almonds: Almonds add a nice crunch and flavor to the casserole. Be sure to use whole almonds, not slivered almonds.
  • Season the casserole well: Salt, pepper, and garlic powder are a good starting point. You can also add other seasonings, such as paprika, cumin, or chili powder.
  • Bake the casserole until it is golden brown: The casserole should be baked until the top is golden brown and the cheese is melted and bubbly.
  • Let the casserole rest before serving: Let the casserole rest for 10-15 minutes before serving. This will allow the flavors to meld and the casserole to set.

Conclusion:

Rice casserole with cheese and almonds is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover rice. With its creamy cheese sauce, crunchy almonds, and savory rice, this casserole is sure to be a hit with your family and friends.
