1 ½ cups water
½ cup uncooked white rice
2 pounds zucchini
¼ cup butter
¼ cup vegetable oil
½ cup grated Parmesan cheese
½ cup shredded Cheddar cheese
salt and pepper to taste
2 eggs, beaten
1 cup bread crumbs
2 tablespoons butter, melted

Steps:

  • Bring water to boil, add rice. When water returns to a boil, reduce temperature to a low. Cover rice and cook until rice is tender.
  • Preheat oven's broiler. Grease a 9x13 inch baking dish.
  • Cut ends from zucchini and steam until tender. Reserve 2 zucchini for garnish, then dice remaining zucchini.
  • Combine butter and oil in a Dutch oven and heat until butter is melted. Add rice and diced zucchini, then saute until golden, stirring frequently. Stir in the cheeses until melted and add salt and pepper to taste. Let cool slightly, then stir in eggs quickly. Pour into a prepared baking dish and sprinkle generously with bread crumbs.
  • Slice reserved zucchini and arrange around the diced mixture. Drizzle melted butter over top.

2 cups onions, chopped
1 garlic clove, minced
3 cups zucchini, diced

1 1/2 teaspoons fresh thyme or 1/2 teaspoon dried thyme

1/2 teaspoon chili powder

Steps:

  • Preheat oven to 350*.
  • Heat 3 tablespoons of the oil in a large sautee pan and saute 1 cup of the onions with the garlic for 2 minutes.
  • Add the zucchini and mushrooms and saute for 3 minutes more.
  • Combine the vegtables with the cooked chicken, rice, broth, spices, and cheese. Mix and season to taste with salt and pepper.
  • Place mixture in a greased 9 x 13 baking dish.
  • Heat the remaining 1 tablespoon of oil and saute the remaining cup of onions for 3 minutes, then add the tomatoes and chili powder. Season to taste with salt and pepper.

2 skinless, boneless chicken breast halves
1 pinch chili powder, or to taste
1 pinch garlic powder, or to taste
salt and ground black pepper to taste
2 cups water
1 cup uncooked white rice
2 8-ball zucchini
2 tablespoons salted butter, or more as needed
¼ cup diced onion, or to taste
2 tablespoons all-purpose flour, or more as needed
1 cup milk, or more as needed
1 ½ cups shredded Cheddar cheese, or more to taste

Steps:

  • Cover chicken breasts with salted water and brine in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove chicken from brine and pat dry. Season with chili powder, garlic powder, salt, and pepper.
  • Grill until browned and no longer pink in the center, 15 to 20 minutes, flipping halfway through cooking time. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I used a medium-grain rice that I buy at my local Iranian market for these peppers. The package says that the rice is great for stuffing vegetables because it doesn't swell too much, and it's right. It goes into the peppers uncooked and steams in the oven, inside the peppers (so it's important to cook them long enough and cover the baking dish). Make sure that you spoon the sauce left in the baking dish over the rice once the peppers are done. These are good hot or at room temperature. I like to use green peppers.

6 medium peppers, preferably green
2 medium zucchini (about 3/4 pound), shredded
Salt to taste
1/3 cup extra virgin olive oil
2 garlic cloves, minced
1/2 cup finely chopped fresh mint
1/4 cup chopped fresh dill or parsley
1 scant cup uncooked medium grain rice
Freshly ground pepper
2 tablespoons tomato paste dissolved in 2/3 cup water
2 tablespoons freshly squeezed lemon juice

Steps:

  • Prepare the peppers. With a sharp paring knife, cut away the tops, then reach in and pull out the membranes and seeds.
  • Toss the shredded zucchini with salt and let drain in a colander for 20 minutes. Take up handfuls of zucchini and squeeze out as much liquid as possible. Transfer to a medium bowl and add the garlic, mint, parsley or dill, and rice. Season with salt and pepper. Stir in 1/4 cup of the olive oil and let sit for 10 minutes.
  • Meanwhile preheat the oven to 375 degrees. Oil a baking dish large enough to accommodate all of the peppers. Fill the peppers about 3/4 of the way full with the stuffing, and replace the caps. Place in the oiled baking dish. Mix together the tomato paste and water with the remaining olive oil and the lemon juice. Season to taste. Add to the baking dish. Cover the dish with foil. Place in the oven and bake 45 minutes to an hour, until the peppers are soft. Remove from the heat and allow to cool to room temperature, or serve hot. Remove the tops of the peppers and spoon the sauce in the baking dish over the rice before serving.

2 large zucchini, thinly sliced
1 cup vegetable broth, or as needed
2 tablespoons bread crumbs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with about 1 tablespoon olive oil.
  • Mix tomato, onion, garlic, and parsley in a bowl.
  • Place a layer of potato slices in the bottom of the prepared baking dish; sprinkle with about 1/4 the tomato mixture, salt, pepper, and all the rice. Continue layering with potatoes, zucchini, tomato mixture, salt, pepper, and a drizzle of olive oil, ending with a layer of potatoes. Pour in just enough vegetable broth to cover the rice. Adapted by Smitten Kitchen from a recipe originally in 3/2008 Gourmet. A great way to use up excess zuke and tomatoes. I use brown rice and add feta cheese and a bit of Greek oregano to mine. Save dirty pans by cooking the rice in the skillet you will use later for the onions, and cover your baking sheets with parchment; foil reacts with the acid in tomatoes. You'll get fewer servings if having it as a vegetarian main course.

1/3 cup uncooked long-grain white rice
5 tablespoons olive oil
1 1/2 lbs zucchini, sliced 1/4-inch thick (about 3 medium)
1/2 lb plum tomato, sliced 1/4-inch thick

1 medium onion, halved lengthwise and thinly sliced
3 garlic cloves, minced
2 large eggs, lightly beaten

Steps:

  • Preheat oven to 450°F Cook the rice according to your favorite method.
  • While rice cooks, coat two large baking sheets each with a tablespoon of a of olive oil. Spread zucchini and tomato slices on the baking sheets in as close to a single layer as you can. Sprinkle with 1/2 teaspoon salt and a few grinds of black pepper. Roast tomatoes for 10 minutes and zucchini for 20. Flip zucchini halfway through, but don't bother to flip the tomatoes.
  • Heat a large, heavy skillet over medium heat. Once heated, add 2 tablespoons olive oil, heat oil, then add onions, garlic and 1/4 teaspoon salt to pan. Cover and reduce heat to low, cooking onion until limp and tender, about 15 to 20 minutes. Stir occasionally.
  • Combine onion mixture, rice, eggs, thyme, half of your grated cheese and a half-tablespoon of olive oil in a bowl. Add a good amount of freshly ground black pepper. Use the remaining half-tablespoon of olive oil to coat a shallow 2-quart baking dish. Spread half of the rice mixture in bottom of dish. Arrange half of roasted zucchini on top. Spread remaining rice mixture over it, arrange remaining zucchini on top, then tomato slices. Sprinkle with remaining grated cheese and bake in the top third of the oven until set and golden brown, about 20 minutes.

8 medium (5- to 6-oz) tomatoes, left whole, plus 1 large (1/2-lb) tomato, chopped
3 medium onions, chopped
3 tablespoons olive oil
3/4 cup white rice (preferably medium- or short-grain)
1 1/2 cups water
1 1/2 lb ground beef (preferably 80 to 85 percent lean)
3 tablespoons chopped dill
3 tablespoons chopped parsley
2 tablespoons chopped mint
FOR ZUCCHINI AND PEPPERS
6 (1/2-lb) zucchini
6 (5- to 7-oz) green bell peppers
FOR BAKING STUFFED VEGETABLES
3 tablespoons tomato paste
2 cups water
2 tablespoons olive oil
1 tablespoon sugar
1 tablespoon lemon juice

Steps:

  • Slice tops of 6 tomatoes, reserve. Scoop out pulp, drain in sieve, chop. (Save 2 tomatoes.) Cook onions in oil, stirring occasionally, 8-10 mins. until soft, not brown. Add chopped tomato, 3/4 C chopped tomato pulp and cook, stirring occasionally, until liquid evaporates and tomato begins to break down, 5 min. Add rice and cook, stirring, 2 min. Add water, boil, then simmer, covered, over low heat until rice tender and water absorbed, 20 min. Transfer rice mixture to bowl, chill until cool, about 20 min. Add beef, herbs, 1 3/4 tsp salt, and 1 tsp pepper to cooled rice, kneading until smooth. Trim and cut zucchini crosswise in half to fit upright in a deep 7-qt heavy pot with lid. Hollow out each zucchini halfl leave 1/2 inch at bottom. Cut tops off peppers, reserve and hollow. Preheat oven to 400°F with rack in middle. Fill veggies. Arrange tomatoes in cake pan lined with foil. Stir tomato paste into water; add 1/2 cup to pan, reserve rest. Put tops on tomatoes and cover tightly with foil. Bake 45 min. Cut 2 tomatoes into thin slices and layer in 7-qt pot; drizzle with oil. Stand zucchini and peppers in pot, leaning against each another and wedge pepper lids to keep them upright. Sprinkle chopped tomato pulp over and pour tomato water around veggies. Bring to boil then simmer, covered, 20-25 min./140°F. Transfer stuffed vegetables to a serving dish and add sugar and lemon juice to cooking liquid in pot. Boil until reduced to about 1 cup, about 10 minutes. Season with salt. Spoon a little cooking liquid over each stuffed vegetable.

2 tablespoons corn, peanut or vegetable oil
1/2 cup finely chopped onion
1 teaspoon finely minced garlic
1 teaspoon finely chopped fresh marjoram or 1/2 teaspoon dried
4 cups freshly grated zucchini, about 1 1/2 pounds whole
Salt to taste, if desired
Freshly ground pepper to taste
1 cup low-fat cottage cheese
2 eggs, lightly beaten
3/4 cup finely chopped parsley

Steps:

  • Prepare rice and set aside to cool.
  • Preheat oven to 325 degrees.
  • Heat oil in large skillet and add onions and garlic. Cook, stirring, until wilted. Add marjoram and zucchini. Cook, stirring, without browning, about 5 minutes. Add salt and pepper to taste. Pour mixture into bowl. Beat together cottage cheese and eggs and add to zucchini mixture. Add rice, salt, pepper and chopped parsley. Blend well. There should be about 5 cups.

1 teaspoon salt
½ teaspoon black pepper

These are very good and easy to throw together, just make sure the pan is heated quite hot before adding as if it is too cool, it makes it harder to handle them and when it comes to flipping they will tend to want to break up. I served these with a corn relish but feel free to have them on their on. I have included the recipe for the relish if you wish to make it.

3/4 cup uncooked brown rice, should make 11/2 cups cooked
2 medium zucchini, coarsely grated
1 onion, finely chopped
2 tablespoons parsley, finely chopped
2 -3 eggs, lightly beaten (I say 2-3 depending on the weight of eggs.)
1 1/2 cups panko breadcrumbs, flakes (Japanese breadcrumbs, you may have to adjust amount if using regular as they are of different textur)
130 g creamed corn
1/4 cup olive oil
250 g sweet corn relish
1 1/4 cups sour cream
2 tablespoons chives, chopped finely
3 drops Tabasco sauce

Steps:

  • Combine rice, zucchini, onion, parsley, egg, panko flakes and corn in a large bowl, stir with a wooden spoon to mix well.
  • Shape into patties (I usually get about 14 patties from this.).
  • Heat oil in a large frying pan, once quite hot, but not smoking, add patties in batches and cook until browned on both sides and heated through. Drain on absorbent paper. I served mine with a dollop of corn relish and cream. Recipe follows.
  • To Serve: Place salad some salad greens on a plate, arrange patties on this and top with relish if desired.
  • Corn Relish and Cream.
  • I think this relish is quite delicious and goes great with the patties, I can't get corn relish where I am so I make my own. I am not sure how using a jar of store bought will adjust the taste, (as this is what I have listed for the recipe.) but I am sure it will still taste great.
  • Combine all ingredients in a bowl. That's it easy peasy, This makes about 2 cups.

  • Increase heat to medium-high and add remaining 1 tablespoon oil to skillet. Add zucchini and remaining 1/8 teaspoon salt; saute 3 minutes or until zucchini starts to soften. Add garlic and shrimp; cook 4 minutes or until shrimp are done. Divide mixture evenly among bowls.

Prepare 1 cup white basmati rice, set aside
1medium to small yellow onion, chopped
1 medium to small zucchini, chopped into 1/4 inch cubes

2 ears of fresh corn or one can niblets corn
1-3 TBSP. butter
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground cummin seed
1/4 tsp. dried oregano leaves, crushed in the palm of your hand

Steps:

  • Prepare the rice and set aside. Saute' chopped onion and chopped zucchini in 1 TBSP of butter until just tender but not fully cooked. With a sharp knife, strip the kernals from two ears of fresh corn and add to the sauted onion and zucchini with the chopped tomatoes. Add 2-3 TBSP of butter or to taste and season with salt, pepper, cumin and oregano. Add rice and gently stir to mix. Transfer into a lightly oiled casserole dish and bake until throughly heated through. About 20 minutes.

2 zucchini, grated

Steps:

White Wine Mustard Sauce, recipe follows
Green olives, chopped

1 cup white wine
1 cup yellow mustard
1 cup heavy cream
3 zucchini
Salt
1 egg, beaten
1/2 cup Italian bread crumbs
1 clove garlic, minced
Vegetable oil, for sauteing
1 cup long grain rice
1/8 cup dried cranberries
1/4 cup slivered almonds
1 tablespoon butter

Steps:

  • Remove skin the sole fillets with a knife, leaving only the white flesh of the fish. Season each fillet on both sides with salt and pepper. In a large saute pan, heat just enough olive oil to cover the bottom of the pan, over high heat. Place the sole fillets in the pan and sear both sides until they are slightly brown and cooked through. Top each fillet with the white wine mustard sauce and diced green olives. Plate with Zucchini Fritters and Rice Almandine.
  • In a medium sized saute pan, reduce the wine by 1/2 over medium-high heat. Add the mustard and the cream and stir thoroughly until the flavors have combined.
  • Thoroughly clean the skin of the zucchini. With a standing grater, shred the zucchini and place in colander to drain the water. Add salt, to taste. In a medium sized bowl, combine the egg, breadcrumbs, and garlic. Add the zucchini to the bowl and toss until it is covered with the breadcrumb mixture. Form the mixture into small patties. In a large saute pan, heat vegetable oil over medium-high heat, and add the patties to the pan. Cook the fritters until both sides are browned and crispy.
  • In a small pot, bring 2 cups of water to a rolling boil. Add the rice to the pot and reduce the heat to low. Cover the pot and allow the rice to simmer until all of the water is absorbed. In a small pan, saute the cranberries and almonds in butter over medium heat. Add the cranberries and the almonds to the rice before serving.

Simmer this on low until the zucchini become soft and the onion is transparent. This will take about 30 - 35 minutes. Add the coconut milk with the zucchini is cooked. Simmer for another minute or two and adjust the seasonings to taste. Prepare the rice as directed.

1/2 cup salsa, medium heat (or heat of choice)
1 cup brown rice
1/2 teaspoon salt
4 chicken thighs, boneless skinless (1 1/4 lbs)
2 tablespoons brown rice flour (or flour of choice)
1 teaspoon ground cumin
1/4-1 teaspoon chili powder (or to desired heat)
1/2 teaspoon italian seasoning
1/2 teaspoon salt
1 onion, small (chopped or minced)
1/2 green pepper, large (chopped or minced)
1 teaspoon garlic, minced
1 lb zucchini, cut into 4ths then sliced for 1/4 round slices
1 cup salsa, bottled
olive oil, for frying

Steps:

  • Bring first four ingredients to a boil in saucepan. Cover and simmer 45-50 minutes.
  • Cut chicken into bite size chunks, shake in plastic bag with the rice flour, cumin, chili powder, Italian seasoning and salt.
  • I use Pam type spray or several teaspoons olive oil to saute onions and peppers, cook till onions translucent, add garlic. cook a minute or so. Add zucchini and cover, toss frequently to start the zucchini cooking. Let cool -- then add salsa. Mix together, cover and let simmer.
  • In another frypan, heat a few teaspoons olive oil or Pam type spray. Brown chicken cubes that you shook with seasoning and flour.
  • Add chicken chunks to the veggies, simmer until rice is done.
  • Serve over rice.
