EASY FALL OFF THE BONE OVEN-BAKED RIBS

Easy Fall Off the Bone Oven-Baked Ribs image

Low and slow cooking make these oven-baked ribs fall off the bone tender. Once baked, we like to add our sweet and spicy barbecue sauce to the ribs, but use whatever you love. For the most tender ribs, we remove the thin membrane covering the back of the rack. Depending on where you have purchased ribs, this may already be done for you. If not, instructions are in the notes section below. FAQ: We call for baby back ribs in the recipe, but other types of ribs (spareribs, country-style, St. Louis-style) will work with this recipe. Cook time should be similar, we recommend that you check on the ribs while they cook to see how they are progressing. FAQ: Doubling or tripling the recipe below should not change the recipe method or bake time. You might need to use two pans for baking.

Time 3h15m

Yield Makes 4 Servings

Number Of Ingredients 10

2 to 2 1/2 pounds baby back pork ribs
Salt and black pepper
1 tablespoon olive oil
1/4 cup finely diced onion
1/2 teaspoon ground cumin
1/2 cup ketchup, try our homemade ketchup recipe
1 tablespoon hot chili sauce (suggestion Sriracha)
2 tablespoons light brown sugar
1 tablespoon apple cider vinegar
Salt and ground pepper, to taste

Steps:

  • Heat oven to 275° Fahrenheit (135C).
  • If the ribs still have the thin membrane covering the back of the rack, remove it. See how in the notes section below.
  • Season both sides of the ribs with a generous amount of salt and pepper. If you are using a spice rub, add season the ribs with it now. Place the ribs, meat-side up, into a large roasting pan or rimmed baking sheet. (It may be necessary to cut the ribs in half for them to fit into the pan).
  • Cover the pan or baking sheet tightly with aluminum foil, and then bake until the meat falls easily from the bones, 2 ½ to 3 ½ hours. We like to check the ribs after 2 hours to see how they are progressing. The ribs are done when the meat is cooked through and tender.
  • While the ribs bake, make the barbecue sauce. Heat the olive oil in a saucepan over medium heat.
  • Add the onions and cook until soft and translucent, 5 to 8 minutes. Stir in the cumin and cook for an additional 30 seconds.
  • Add the ketchup, hot chili sauce, brown sugar, and apple cider vinegar. Stir to combine, season with salt then cook for 2 minutes. Set aside in preparation for the ribs to finish roasting.
  • Remove the ribs from the oven, discard the aluminum foil and generously brush both sides with barbecue sauce.
  • Optional: Move an oven rack near the top of the oven. Turn broiler to high and broil the ribs for 3-4 minutes, just until the barbecue sauce begins to caramelize. (Keep a close eye on the ribs while they broil so the sauce does not burn.)
  • Store baked ribs, in an airtight container, in the refrigerator for up to 3 days. Freeze, wrapped in foil or freezer paper and in an airtight container, for up to 3 months. Thaw in the refrigerator, and then reheat.
  • To reheat the ribs, wrap in foil or parchment paper and place into a 300°F oven until warmed through, about 30 minutes. If you have some leftover, slather some extra sauce that's been warmed over the ribs before serving.

STUFFED RIBS

Stuffed Ribs image

My Mom made these when I was growing up, often after we had a turkey dinner and had leftover stuffing/dressing. They are delish!

Categories     Meat and Poultry Recipes     Pork     Pork Rib Recipes     Baby Back Ribs

Time 2h15m

Yield 4

Number Of Ingredients 12

1 teaspoon poultry seasoning
1 teaspoon garlic salt
¼ teaspoon black pepper
2 (2 pound) slabs baby back pork ribs
8 cups day-old bread cubes
1 celery, diced
½ cup minced onion
¼ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
2 teaspoons poultry seasoning
1 cup chicken broth

Steps:

  • Combine 1 teaspoon poultry seasoning, garlic salt, and 1/4 teaspoon black pepper. Sprinkle over the meaty side of the ribs, and rub into the meat. Let stand while making the dressing.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, combine bread cubes, celery, onion, garlic powder, salt, 1/4 teaspoon black pepper, and 2 teaspoons poultry seasoning. Mix well with your hands. Pour the broth evenly over the mixture to dampen all of the stuffing. Lay one rack of the ribs on the counter, meaty side down. Top with the stuffing; pile it up! Top with the second rack of ribs, meaty side up. Wrap and tie with thread or string in about 3 places to keep them together. Transfer to a rack in a roasting pan.
  • Cover, and bake for 1 hour in preheated oven. Remove the cover, and bake an additional 45 minutes to 1 hour.

STUFFED CABBAGE

Stuffed Cabbage image

This simple dinner is classic comfort food: boiled cabbage leaves stuffed with a hearty meat and rice filling.

Categories     feed a crowd     winter     comfort food     dinner     main dish     meat

Time 2h

Yield 6-8 servings

Number Of Ingredients 19

15 oz. crushed tomatoes
8 oz. tomato sauce
3/4 tsp. salt
1/4 tsp. red chili flakes, optional
1 tbsp. brown sugar
1 tbsp. red wine vinegar
1 clove of garlic
1 whole head of green cabbage
1 lb. ground beef
1 lb. ground pork
1/2 c. chopped onions
1 egg
2 tbsp. milk or cream
1/4 c. breadcrumbs
1 c. cooked rice
1/4 c. chopped fresh parsley
1 tsp. salt
1/2 tsp. ground black pepper
Mashed potatoes, for serving

Steps:

  • For the sauce: In a large bowl, combine the crushed tomatoes, tomato sauce, salt, red chili flakes (if using), brown sugar, and red wine vinegar. With a microplane, grate the clove of garlic into the sauce and stir well to combine. (Alternatively, you can very finely chop the garlic.)
  • For the filling: Bring a large pot of salted water to a boil. Cut out the core from the base of the cabbage and remove the 1-2 outer leaves. Place the cabbage cut side down into the pot of boiling water. As you see leaves naturally start to separate from the head of cabbage, gently coax the leaf off with a pair of tongs and transfer it to a colander set over a bowl. You will need about 14 cabbage leaves. This process takes about 6-8 minutes. Rinse the leaves with cold water until cool enough to handle. Drain well and pat dry with a clean kitchen towel.
  • Place the cabbage leaves on a cutting board and make a V-shaped cut at the bottom of each leaf, to cut out the thickest part of the center rib.
  • In a large bowl, combine the ground beef, pork, onion, egg, milk or cream, breadcrumbs, rice, parsley, salt and pepper. Mix gently to combine.
  • Preheat the oven to 350 degrees. Butter a 9-inch-by-13-inch casserole dish. Ladle 1 cup of sauce into the dish and spread all over. Starting with the largest, outer cabbage leaves, lay each cabbage leaf flat. Take about 1/3 cup of filling and roughly shape it into an oval shape, about 4-inches long. (For some of the larger leaves, use up to ½ cup of filling.) Place the oval in the center a cabbage leaf, just above where the rib was cut. Fold the sides of the cabbage leaf over the filling and roll up into a little bundle (start rolling at the cut side, over into the uncut side). Place seam side down over top of the sauce in the baking dish. Repeat until each cabbage leaf is used. Drizzle the remainder of the sauce all over.
  • Cover tightly with foil and bake for 1 hour and 30 minutes, until the meat is cooked through. Serve with a side of mashed potatoes, if you like.

SHORT RIBS WITH CABBAGE

Short Ribs With Cabbage image

I got this in my e-mail yesterday from Ethnicgrocers.com in a newsletter. The newsletter gave recipes for a Polish dinner, and this was the suggested entree.Looks like a winner, and so it goes on my "must try" list. The number of servings was not given, so I'm guessing 6-8.

Categories     One Dish Meal

Time 2h30m

Yield 6-8 serving(s)

Number Of Ingredients 10

2 tablespoons olive oil
4 lbs short rib of beef, cut into serving pieces
kosher salt or sea salt, to taste
black pepper, to taste
1 cup beef stock or 1 cup beef broth
2 teaspoons dry mustard
1/2 cup red wine vinegar
1/2 teaspoon dried oregano
1 small onion, sliced (about 1/2 cup)
1 head cabbage, cut into weges

Steps:

  • Heat oil in a large, heavy pot.
  • Brown short ribs on all sides.
  • Sprinkle with salt and pepper.
  • Add remaining ingredients except cabbage.
  • Cover and simmer for 1-1 1/2 hours.
  • Add cabbage wedges and cook until cabbage is tender, about 20 minutes.

Tips for Making Perfect Ribs and Stuffed Cabbage:

  • Choose the right ribs: Baby back ribs are the most popular choice for ribs, as they are tender and flavorful. Spare ribs are also a good option, but they are slightly tougher and have more meat.
  • Prepare the ribs properly: Remove the membrane from the back of the ribs before cooking. This will help the ribs to cook evenly and will prevent them from becoming tough.
  • Use a good rub: A good rub will help to flavor the ribs and create a crispy crust. There are many different rub recipes available, so experiment until you find one that you like.
  • Cook the ribs slowly and low: Ribs need to be cooked slowly and low in order to become tender. The best way to do this is to cook them in a smoker or oven at a temperature of around 225 degrees Fahrenheit.
  • Make sure the cabbage leaves are tender: The cabbage leaves need to be tender in order to be able to be rolled and stuffed. You can soften the cabbage leaves by boiling them for a few minutes or by microwaving them for a few minutes.
  • Use a flavorful filling: The filling for the cabbage rolls can be made with a variety of ingredients, such as ground beef, pork, or lamb. Season the filling generously with herbs and spices to taste.
  • Roll the cabbage rolls tightly: The cabbage rolls need to be rolled tightly in order to prevent them from falling apart during cooking. Use a toothpick or skewer to secure the cabbage rolls.
  • Cook the cabbage rolls in a flavorful sauce: The cabbage rolls can be cooked in a variety of sauces, such as tomato sauce, cream sauce, or gravy. Simmer the cabbage rolls in the sauce until they are heated through.

Conclusion:

Ribs and stuffed cabbage are two classic dishes that are perfect for a special occasion or a casual meal. By following these tips, you can make sure that your ribs and stuffed cabbage turn out perfectly every time.
