- 3. Then combine together in a small bowl. If you would like a finer texture, pulse in a food processor for a couple of times.
- 4. Season steaks liberally on both sides. then allow to stand at room temperature for at least 15 minutes to an hour, or wrap and refrigerate overnight for a more intense flavor.
- 5. Bring to room temperature before grilling.
- 6. Add olive oil to a grill skillet or you may want to cook on the grill. Bring temperature to very high heat, when hot and smoking add steaks carefully to grill skillet. Sear on one side about 3 minutes then do a quarter turn and sear for an additional 3 minutes. Flip steak over and place in preheated broiler and continue to cook for about 4-5 minutes depending on how you like your steak cooked. Remove from broiler.
- 7. Top with herb butter if desired, while steaks are still hot as steaks rest about 10 minutes before serving.
Tips:
- Choose the right steak: Look for a rib-eye steak that is at least 1-inch thick and has good marbling.
- Bring the steak to room temperature before cooking: This will help the steak cook evenly.
- Season the steak generously with the rub: Be sure to coat all sides of the steak.
- Cook the steak over high heat: This will help to create a nice crust on the outside of the steak while keeping the inside juicy.
- Let the steak rest before slicing: This will help the juices redistribute throughout the steak.
