1/2 cup steak rub
4 tablespoons paprika
2 tablespoons course black pepper
1/2 tablespoon white pepper
1/2 tablespoon cayenne pepper
4 tablespoons rib rub
5 tablespoons minced garlic
1/2 cup brown sugar
6 tablespoons balsamic vinegar
1 tablespoon sea salt
1/4 cup chopped fresh rosemary
1/4 cup chopped fresh tarragon
1/4 cup chopped fresh thyme
Olive oil, as needed
15 steaks

Steps:

  • Combine all ingredients, except oil, in a large bowl. While stirring, add olive till the mixture is a "slushy" consistency. Submerge steaks in mixture, rubbing it into the surface of the steaks. Marinate steaks in mixture for approximately 30 minutes. Preheat grill to 425 to 450 degrees F and place steaks on grill, flipping halfway through. To cook a 16-ounce steak to preferred doneness, cook for: rare, 2 to 3 minutes on each side, medium-rare, 4 to 5 minutes on each side and medium, 6 to 7 minutes on each side

HERB RUB FOR STEAKS
1 Tbsp smoked paprika
2 tsp smoked alderwoood sea salt
11/2 Tbsp granulated garlic(not garlic salt)
2 Tbsp dried thyme
1 tsp coarse black pepper
1 Tbsp parsley or chopped chive

Steps:

  • 1. Measure out all the herbs and spices onto a small platter or plate.
  • 2. This is what they look like. We love the flavor of the Alderwood Smoked Sea Salt. Use caution when seasoning meats with salt so you don't use too much. This blend was enough to season 6 Rib Eye Steaks.
  • 3. Then combine together in a small bowl. If you would like a finer texture, pulse in a food processor for a couple of times.
  • 4. Season steaks liberally on both sides. then allow to stand at room temperature for at least 15 minutes to an hour, or wrap and refrigerate overnight for a more intense flavor.
  • 5. Bring to room temperature before grilling.
  • 6. Add olive oil to a grill skillet or you may want to cook on the grill. Bring temperature to very high heat, when hot and smoking add steaks carefully to grill skillet. Sear on one side about 3 minutes then do a quarter turn and sear for an additional 3 minutes. Flip steak over and place in preheated broiler and continue to cook for about 4-5 minutes depending on how you like your steak cooked. Remove from broiler.
  • 7. Top with herb butter if desired, while steaks are still hot as steaks rest about 10 minutes before serving.
