The batter for this coffee cake recipe is much like that for a biscuit; chilled butter is cut in rather than creamed, which produces an uber-tender crumb. This recipe was developed by Emily Donahue for Rosey's Coffee and Tea in Hanover, New Hampshire.

STRAWBERRY-RHUBARB UPSIDE-DOWN CAKE
This humble dessert would never win a beauty contest when pitted against a towering layer cake swirled with frosting, but what it lacks in looks, it makes up in flavor and simplicity of preparation. The cake itself is light yet moist and soaks up the juice released by the strawberries and rhubarb while baking. Sliced almonds add a gentle crunch. It can be a bit tricky to unmold, so don't forget to line the pan with parchment and grease it generously with butter.

Steps:
- Preheat the oven to 350 degrees. Line a 9-inch round pan (at least 2 inches deep) with parchment paper and grease the parchment with 1 to 2 teaspoons softened butter. To make the topping, melt 4 tablespoons butter in a small saucepan. Add the brown sugar to the remaining butter and cook until the sugar is melted, stirring until smooth. Spread the mixture evenly over the bottom of the pan. Scatter the almonds over the brown-sugar mixture. Arrange the strawberries over the almonds in concentric circles, cut-side up. Top with the rhubarb and set aside.
- To make the cake, using an electric mixer cream the butter and sugar until very light and fluffy. Add the eggs, one at a time, and beat well. Sift together the flour, baking powder and salt. Combine the vanilla with the milk. Add the flour mixture alternately with the milk, beginning and ending with flour. Mix just until combined.
- Spread the batter over the fruit in the pan. Bake until the cake springs back when touched in the center, about 1 hour. (Cover the cake with foil if the top browns too much before the cake is done.) Remove the cake from the oven and let stand for 5 minutes. Turn out onto a cake plate. Replace any fruit that sticks to the pan. Serve warm or at room temperature.

GRANDMA MOYER'S RHUBARB AND STRAWBERRY COFFEE CAKE
This was my Grandma Moyer's recipe. It has been missing since at least the mid 80's. I found it stuck the middle of an old book I got after my mom passed away. Everyone in the family has been trying to recreate this delicious coffee cake for years. It is moist and very flavorful. I added the strawberries because I like it a little sweeter. Rhubarb is an ingredient that you don't see used very often any more, but those of us who do use it always love to find new ways to spread the love.

Tips:
- Prepare the rhubarb and strawberries properly: Cut the rhubarb into small pieces and remove any tough ends. Slice the strawberries evenly. This will ensure even cooking and distribution of flavor.
- Use fresh, ripe rhubarb and strawberries: This will ensure the best flavor and texture in your cake. If using frozen fruit, thaw it completely before using.
- Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the batter, resulting in a lighter, more tender cake.
- Gradually add the eggs one at a time: This will help to prevent the batter from curdling.
- Sift the flour and baking powder together before adding to the batter: This will ensure that the ingredients are evenly distributed and the cake rises properly.
- Do not overmix the batter: Overmixing can result in a tough, dense cake. Mix just until the ingredients are combined.
- Bake the cake at the correct temperature and for the correct amount of time: This will ensure that the cake is cooked through but not overcooked. A toothpick inserted into the center of the cake should come out clean when it is done.
Conclusion:
This rhubarb strawberry cake is a delicious and easy-to-make treat that is perfect for any occasion. With its moist crumb, sweet and tangy filling, and crunchy streusel topping, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this rhubarb strawberry cake a try. You won't be disappointed!
