50g caster sugar
250g rhubarb
1 chopped ball of stem ginger in syrup

Tips:

  • Choose the right rhubarb. Look for firm, bright red stalks with minimal blemishes. Avoid stalks that are limp or have brown spots.
  • Prepare the rhubarb properly. Wash the rhubarb stalks and trim off the ends. Cut the stalks into 1-inch pieces.
  • Use a heavy-bottomed saucepan. This will help to prevent the pudding from burning.
  • Cook the rhubarb until it is soft. This will take about 10 minutes.
  • Add the rice and milk. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the rice is tender.
  • Stir in the sugar, vanilla extract, and salt. Cook for an additional 5 minutes, or until the pudding has thickened.
  • Serve the pudding warm or cold. You can also top it with whipped cream, fresh fruit, or a sprinkle of cinnamon.
