CHILLED RHUBARB SOUP AND VANILLA ICE CREAM

Chilled Rhubarb Soup and Vanilla Ice Cream image

Provided by Bryan Miller And Pierre Franey

Categories     dessert

Time 2h

Yield 8 servings

Number Of Ingredients 12

1 tablespoon butter for greasing cookie sheet
1/2 cup sugar
1/4 cup crushed almonds
1/3 cup crushed hazelnuts
1 vanilla bean, chopped on a bias into 1/4-inch sections
12 cups chopped fresh rhubarb, trimmed of leaves
1 vanilla bean, split lengthwise
2 cups sugar plus 3 tablespoons, or to taste
3 cups fresh rhubarb, from the tender narrow end, sliced thinly on a bias (for garnish)
1/3 cup fresh lemon juice
1/2 cup strawberries (about 4, stems removed) diced into 1/8-inch cubes)
3/4 pint vanilla ice cream, slightly softened

Steps:

  • To make the caramel, butter a cookie sheet and set aside.
  • In a heavy skillet over medium-high heat, caramelize the sugar by cooking it while stirring frequently, about 10 minutes. The caramel should be golden brown. Remove from heat.
  • Add the almonds and hazelnuts. Return pan to low flame and cook, stirring, for 2 minutes. Add vanilla bean slivers and remove from heat.
  • Pour the caramel onto the cookie sheet. Let it cool and harden.
  • With a sharp, heavy knife, mince the caramel well. (Do not use a food processor because it will turn the caramel into powder.) You should have about 3/4 cup of crushed caramel. Spread the mixture over a baking sheet and set aside.
  • To make the soup, place the 12 cups of chopped rhubarb and the vanilla bean in a pot and cover with 8 cups water. Add 2 cups of the sugar.
  • Bring to a boil, reduce heat, and simmer for 90 minutes. When the liquid has cooked for about 15 minutes, remove the vanilla bean and squeeze out the tiny black seeds inside into the pot. To do this, pinch the bean with your thumb and forefinger and run your fingers down the length of the bean. Toss the skin back into the pot.
  • Meanwhile, place the 3 cups of rhubarb garnish in a pot and add 3/4 cup water and 3 tablespoons of sugar. Bring to a boil and simmer until soft, 2 to 3 minutes. When the rhubarb is cooked, remove the pot from the heat, and place it in a bowl filled with ice and water to stop the cooking.
  • When the other rhubarb soup mixture has finished cooking, strain it through a fine sieve or chinois (do not press the solids). You should have about 7 cups of liquid. Chill thoroughly. Before serving, season the soup and the rhubarb garnish slices with sugar and lemon juice.
  • To serve, place equal amounts of the rhubarb garnish in serving bowls. Add equal portions of the minced strawberries. Ladle over the soup mixture. Place a scoop of vanilla ice cream in the center of the crushed caramel, and roll it to coat. Place the ice cream in the center of the soup, and sprinkle a little more caramel over the top.

RHUBARB ICE CREAM WITH A CARAMEL SWIRL

Rhubarb Ice Cream With a Caramel Swirl image

This ice cream is chock-full of sweet bits, but with enough satiny frozen custard to savor between the chunks. To keep the rhubarb from freezing into tooth-breaking fruity ice cubes, stew it with plenty of sugar, which keeps the fruit soft. The technique works with any summer fruit, though it's especially nice with rhubarb, or gooseberries for that matter, both of which need a lot of sugar to tame their squint-inducing acid content. But you can substitute strawberries, apricots, cherries, peaches or plums as the summer fruit season progresses, adjusting the sugar depending upon the sweetness of the fruit.

Categories     ice creams and sorbets, dessert

Time 1h15m

Yield One scant quart

Number Of Ingredients 8

1 and 1/2 cups whole milk
1 and 3/4 cup plus 6 tablespoons granulated sugar
Pinch fine sea salt
1 vanilla bean, split and scraped
4 large egg yolks, lightly beaten
1 and 1/2 cups sour cream
3/4 pound rhubarb, cut into 1/2-inch dice
1/2 cup heavy cream

Steps:

  • In a heavy-bottomed pot over medium heat, whisk together the milk, 3/4 cup sugar, the salt, the vanilla bean seeds and its pod. Simmer gently until sugar dissolves, about 5 minutes. Remove from heat, cover, and steep 30 minutes. Discard the vanilla pod and return mixture to a bare simmer.
  • Place the yolks in a large bowl. Slowly whisk in hot milk mixture. Scrape the custard back into the pot and cook over medium-low heat, stirring constantly, until mixture is thick enough to coat the back of a spoon, about 5 minutes. Strain through a fine-mesh sieve into a bowl. Whisk in sour cream. Chill at least 3 hours or overnight.
  • In a saucepan, combine the rhubarb with 1 cup sugar. Simmer until rhubarb is just tender and has begun releasing its juices, but has not started to fall apart, 4 to 5 minutes. Using a slotted spoon, transfer rhubarb to a bowl. Continue to simmer the juices until syrupy, 5 to 10 minutes more. Pour the syrup over the rhubarb. Cool completely.
  • In a clean, dry and preferably nonstick skillet, sprinkle 2 tablespoons sugar over medium heat. When it begins to melt and lightly color, sprinkle in 2 more tablespoons and start swirling pan to help evenly distribute sugar. Add the final 2 tablespoons and cook, swirling pan until all the sugar has melted. Let cook, swirling occasionally, until the sugar syrup caramelizes and turns dark brown. Pour in the heavy cream and 2 tablespoons water (stand back; it may splatter). Simmer, stirring with a heatproof rubber spatula until smooth. Cool completely.
  • Pour the custard base into an ice cream machine and churn. Add rhubarb compote for the last minute of churning.
  • Scrape a quarter of the caramel into the bottom of a freezer-proof quart container. Top with a quarter of the ice cream. Repeat layering until all of the caramel and ice cream has been used, ending with the ice cream. Freeze until firm for at least 2 hours and up to 1 week.

RHUBARB CRUMBLE ICE CREAM

Rhubarb Crumble Ice Cream image

Make and share this Rhubarb Crumble Ice Cream recipe from Food.com.

Provided by MarieRynr

Categories     Frozen Desserts

Time 2h10m

Yield 2 pints

Number Of Ingredients 8

1 lb trimmed rhubarb
15 fluid ounces whipping cream
8 ounces sugar
1 tablespoon lemon juice
3 ounces plain white flour
2 ounces butter
2 ounces light brown muscovado sugar
1/2 teaspoon ground ginger

Steps:

  • First of all make the crumble by combining all the ingredients together in a bow and using your hands to rub the butter into the flour s that the mixture comes together to form small, pea-sized balls of dough.
  • Sprinkle this evenly into an 11 X 7 inch baking tin and set aside.
  • Cut the rhubarb into 1/2 inch lengths and place them in a large shallow baking dish along with the sugar and lemon juice.
  • Place the dish on a lower shelf in an oven, preheated to 375*F, Place the tin containing the crumble mixture on the shelf above it.
  • The crumble needs to be baked for 10 minutes, then remove it from the oven and cool.
  • The rhubarb may need a further 15 to 20 minutes cooking before it is completely tender: when it is cooked, take it outand puree it in a food processor or blender til smooth.
  • Transfer to the fridge and chill.
  • Before making the ice cream, use your hands to break up the cooled crumble and restore it to small peas sized pieces.
  • (If they are too big the pieces are too unwieldy to eat, if too small, they tend to disappear.) Next, stir the cream into the rhubatb puree, pour it into an ice-cream maker and churn until the mixture has the consistency of softly whipped cream.
  • Quickly spoon into a plastic freezer box and stir in the crumble pieces.
  • Put on the lid, and then freeze for a minimum of 2 hours, or until the ice cream is firm enough to serve.
  • To make without an ice-creammaker, freeze the mixture, without the crumble, in the box for 3 to 4 hours, then whisk and return to the freezer.
  • Refreeze for a further 2 hours, then whisk again, and stir in the crumble before the final freezing.

Tips:

  • Use fresh rhubarb: Fresh rhubarb stalks are more flavorful and have a better texture than frozen or canned rhubarb. Look for rhubarb stalks that are firm and have a deep red color.
  • Trim the rhubarb: Before using, trim the ends of the rhubarb stalks and remove any leaves. You can also peel the rhubarb stalks, but this is not necessary.
  • Cook the rhubarb: Rhubarb needs to be cooked before it can be used in ice cream. You can cook the rhubarb in a saucepan on the stovetop or in the microwave. Once the rhubarb is cooked, let it cool completely.
  • Use a good quality ice cream maker: An ice cream maker is essential for making rhubarb ice cream. Choose an ice cream maker that is large enough to accommodate the ingredients and that has a powerful motor.
  • Chill the ice cream base: Before churning the ice cream, chill the ice cream base in the refrigerator for at least 4 hours. This will help the ice cream to churn more quickly and smoothly.
  • Churn the ice cream: Once the ice cream base is chilled, churn it in the ice cream maker according to the manufacturer's instructions. This usually takes about 20-30 minutes.
  • Freeze the ice cream: After the ice cream has been churned, transfer it to a freezer-safe container and freeze it for at least 4 hours before serving.

Conclusion:

Rhubarb ice cream is a delicious and refreshing treat that is perfect for summer. It is easy to make and can be customized to your liking. With a few simple ingredients and an ice cream maker, you can enjoy this delicious dessert in no time.
