A tangy crisp with a hint of ginger and a nice crunch to the topping. The custard filling is soft and creamy, yet holds together beautifully. This makes a large crisp - great to take to a potluck or party.

Tips:

  • Choose young and tender rhubarb: Select stalks that are firm and have a deep red color. Avoid stalks that are wilted or have blemishes.
  • Wash the rhubarb thoroughly: Rinse the rhubarb under cool running water to remove any dirt or debris. Trim the ends of the stalks and cut them into ½-inch pieces.
  • Peel the ginger if desired: While the peel is edible, it can be tough and fibrous. If you prefer a smoother口感, peel the ginger before using it.
  • Use a variety of sweeteners: This recipe calls for maple syrup, but you can also use honey, agave nectar, or your favorite sweetener. Adjust the amount of sweetener to taste.
  • Chill the cooler before serving: For the best flavor, chill the cooler for at least 2 hours before serving. You can also freeze the cooler for up to 2 months. To serve, thaw the cooler overnight in the refrigerator or at room temperature for several hours.

Conclusion:

Rhubarb Ginger Cooler is a refreshing and flavorful drink that is perfect for summer. It is easy to make and can be enjoyed by people of all ages.
