1 cup almond flour
¾ cup creme fraiche
2 tablespoons creme fraiche
⅔ cup white sugar
2 large eggs
2 teaspoons vanilla sugar
1 teaspoon ground cinnamon

Time 1h5m

Yield 18 serving(s)

Number Of Ingredients 7

1 (18 1/4 ounce) yellow cake mix
1 1/3 cups water, for cake mix
1/2 cup vegetable oil, for cake mix
3 eggs, for cake mix
4 cups rhubarb, chopped
1 cup granulated sugar
1 pint heavy cream

Steps:

  • Prepare batter for cake mix according to package directions; turn into greased and floured 9 x 13 pan.
  • Dump the chopped rhubarb on top of the cake batter.
  • Sprinkle the sugar on the top of the rhubarb.
  • Pour the heavy cream over the sugar.
  • Bake at 350°F for 50-60 minutes, until cake springs back when lightly touched.

Tips:

  • For a creamier custard, use full-fat milk and heavy cream. You can also add a tablespoon of cornstarch to the custard mixture to thicken it.
  • If you don't have a food processor, you can grate the rhubarb by hand. Just be sure to grate it finely so that it cooks evenly.
  • If you want a sweeter cake, you can add more sugar to the batter. You can also top the cake with a glaze made from powdered sugar and milk.
  • Be careful not to overcook the cake. The custard should be set, but it should still be slightly wobbly in the center.
  • Let the cake cool completely before serving. This will allow the custard to firm up and the flavors to meld.
