SOUR CREAM RHUBARB SQUARES

This recipe was rescued and given a new name. I have changed a few of the ingredients, all in all this is a wonderful recipe. My family was surprised it tasted so good as they don't like rhubarb that much- but changed their mind when they took the first bite. So pucker up and kiss the cook!

RHUBARB CREAM SQUARES

These are one of my favorite ways to eat rhubarb. The custard balances out the tartness of the rhubarb. Even better with a dollop of whipped cream. My grandmother was a great baker and this recipe comes from her.

Tips:

  • For the best results, use fresh rhubarb stalks that are firm and brightly colored. Avoid stalks that are wilted or have brown spots.
  • To easily remove the rhubarb's tough outer skin, use a vegetable peeler.
  • If you don't have a pastry blender, you can use two knives to cut the butter into the flour mixture.
  • Be sure to chill the dough before rolling it out. This will help prevent the dough from sticking to the rolling pin and make it easier to work with.
  • When baking the crust, prick the bottom with a fork to prevent it from bubbling up.
  • To make the cream cheese layer, be sure to use softened cream cheese. This will make it easier to mix and spread.
  • For a smoother cream cheese layer, use a hand mixer or stand mixer to beat the cream cheese and sugar together.
  • Be sure to let the bars cool completely before cutting them into squares. This will help prevent them from falling apart.

Conclusion:

Rhubarb cream squares are a delicious and easy-to-make dessert that is perfect for any occasion. With a sweet and tangy filling and a buttery crust, these bars are sure to be a hit with everyone who tries them. So next time you're looking for a special treat, give rhubarb cream squares a try.
