Tips:
- Use fresh rhubarb: Fresh rhubarb has a tart and slightly sour flavor that pairs perfectly with the sweet cream cheese filling. If you can't find fresh rhubarb, you can use frozen rhubarb, but be sure to thaw it completely before using.
- Don't overcook the rhubarb: Overcooked rhubarb will become mushy and lose its flavor. Cook the rhubarb just until it is tender, about 5-7 minutes.
- Use a good quality cream cheese: The cream cheese is the star of this recipe, so it's important to use a good quality brand. Look for a cream cheese that is smooth and creamy, with no lumps.
- Don't overbeat the cream cheese filling: Overbeating the cream cheese filling will make it dense and heavy. Beat the filling just until it is smooth and creamy.
- Chill the bars before serving: Chilling the bars before serving will help them set and make them easier to cut.
