1 1/2 ounces lard, chilled and cut into small pieces
1 1/2 ounces ice water, approximately 3 tablespoons

1 pound rhubarb, chopped into 1/2-inch pieces
1 pound sliced peaches, peel on and sliced into 1/2 to 1-inch pieces
1 tablespoon freshly squeezed lime juice

Steps:

  • Preheat the oven to 375 degrees F. Place a piece of aluminum foil on the bottom rack to catch any drippings. Butter a 9 by 9-inch glass baking dish and set aside.
  • Place the flour, 1-ounce sugar, lime zest, and 1 teaspoon salt into the bowl of a food processor and pulse 3 to 4 times. Add the butter and lard and pulse until the mixture just becomes crumbly. With the remaining dough still in the bag, roll it out to a sheet large enough to cover the top of the dish. Pour the fruit mixture into the dish and top with the dough that has been removed from the bag, pressing the dough into the corners of the dish. Bake, uncovered, for 60 minutes or until the dough is cooked through and starting to turn golden. *If using frozen fruit, increase cooking time to 90 minutes.
  • Change the oven setting to broil and continue to cook until golden brown, approximately 3 minutes. Remove from the oven and allow to stand for 15 to 30 minutes before serving.

1/2 pound rhubarb (2 stalks), peeled and cut into 1-inch thick slices

1/4 cup water
1 tablespoon all-purpose flour
1 teaspoon finely grated lemon zest

4 cups pitted cherries
2/3 cup sugar
1 tablespoon flour
3 cups rhubarb
butter
1/2 cup shortening or 1/2 cup butter
1 cup sugar
1 egg
1 cup flour
1 teaspoon baking powder
1/2 cup milk

Steps:

  • Filling: combine the filling ingredients in sauce pan, bring to boil to thicken.
  • Add to 3 cups of chopped rhubarb.
  • Mix well.
  • Spread into 9x9 pan.
  • Dot with butter.
  • Crust: Cream butter and sugar.
  • Add the egg and beat well.
  • Combine flour and baking powder.
  • Alternating, add flour mixture and milk to sugar and butter.
  • Mix well.
  • Pour over fruit.
  • Bake at 350 degrees for apx.
  • 1 hour.
  • Check at 45 minutes.
  • if oven runs hot.
  • Very tasty with whipped cream.
  • *can use 1 21 oz.
  • can of cherry pie filling if you don't have fresh cherries.
  • Just pour over the rhubarb and mix well.
  • Don't add the sugar or flour.

1 cup all-purpose flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter
1 egg, slightly beaten
1/4 cup milk
1 cup sugar
2 tablespoons cornstarch
1 tablespoon butter
1 tablespoon water
4 cups rhubarb, cut in 1 inch slices
1/4 teaspoon cinnamon (I like the taste of the rhubard so I don't add it) (optional)

Steps:

  • Pre-heat oven to 400 degrees.
  • Mix first four topper ingredients.
  • Cut in butter until mixture resembles course crumbs.
  • Add slightly beaten egg and milk all at once to dry ingredients, stirring just to moisten.
  • Set Aside.
  • Combine sugar, cornstarch, cinnamon (optional), water, butter and rhubarb.
  • Bring to a boil.
  • Cook and stir for 1-2 minutes.
  • Pour hot rhubarb filling into 8" round or square baking dish.
  • Immediately spoon on biscuit topper in 6 mounds.
  • Bake at 400 degrees for about 25 minutes.
  • Serve with cream or ice cream.

1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 9-by-13-inch baking dish at least 2 inches deep.
  • Mix fruit with 1 cup sugar and tapioca, and pour into dish.
  • Make biscuit dough: Sift together flour, baking powder, remaining 1 1/2 tablespoons sugar and salt. Cut in 1/3 cup butter. Add milk and stir briefly just to mix, then turn onto a floured board and knead gently and briefly. Roll out biscuit dough about 3/4 inch thick, and place over fruit, covering it completely.

3/4 cup packed brown sugar
1/2 cup sugar, divided

1-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
