RHUBARB QUICK BREAD
Beautiful pink rhubarb at the markets signals spring's arrival. A bit sour on their own, the stalks work beautifully with sweet strawberries and blueberries, and citrus. This buttery loaf is made with a bit of orange zest, which perfectly complements rhubarb's pleasant tang. Dress the cooled loaf with a simple glaze of confectioners' sugar and orange juice, if you like, or serve fat slices with vanilla ice cream. Leftovers are nice toasted in a skillet with plenty of salty butter.

Tips:
- To ensure moist and fluffy Rhubarb Bread, use fresh rhubarb and buttermilk or sour cream. Buttermilk or sour cream adds tanginess and moisture to the bread.
- Use the correct pan size: For this Rhubarb Bread recipe, a 9x5 inch loaf pan is ideal. Using a smaller or larger pan may affect the baking time and the texture of the bread.
- Don't overmix the batter: Overmixing can result in a tough and dense loaf of bread. Mix the ingredients just until they are combined, being careful not to overdevelop the gluten.
- Baking time: The baking time can vary depending on your oven, so keep an eye on the bread during the last few minutes of baking. Insert a toothpick or skewer into the center of the loaf; if it comes out clean, the bread is done.
- Cooling the Bread: Allow the Rhubarb Bread to cool completely before slicing and serving. This will help the bread to set properly and prevent it from crumbling.
