1/2 c brown sugar
1/2 c butter
2 c flour
1 1/2 tsp baking powder
2 eggs
2 pkg 3oz. packages strawberry jello
about 4 cups of sliced rhubarb

Steps:

  • 1. Mix sugar, butter, flour, baking powder and eggs together and pat into the bottom od a 13x9x2 in. pan. Wash, and cut into 1/2 inch pieces enough rhubarb to cover crust completely. Then sprinkle the dry jello over the rhubarb. Top with streusel topping.
  • 2. Streusel topping: 1/2 cup butter, 1 1/2 cup granulated sugar, and 1 cup flour.
  • 3. Bake 40 minutes at 350 degrees. Serve with ice cream or whipped topping.

4 cups diced fresh or frozen rhubarb
1-1/2 cups water
1/2 cup sugar
1 package (6 ounces) strawberry gelatin
1 cup orange juice
1 teaspoon grated orange zest
1 cup sliced fresh strawberries
Mayonnaise, fresh mint and additional strawberries, optional

Steps:

  • In a saucepan over medium heat, bring the rhubarb, water and sugar to a boil. Cook, uncovered, until rhubarb is tender, about 6-8 minutes. Remove from the heat; stir in gelatin until dissolved. Stir in the orange juice and zest. , Chill until mixture begins to thicken. Fold in strawberries. Pour into a 2-qt. bowl; chill until set. If desired, garnish with a dollop of mayonnaise, mint and strawberries.

2 tablespoons butter
1 egg, beaten
2 tablespoons milk
4 cups rhubarb, cut into bite size pieces
3 ounces strawberry Jell-O gelatin dessert
1/2 cup flour
1 1/4 cups sugar
1/4 cup butter, melted

Steps:

  • Crumble together the flour, baking powder, salt and butter.
  • Mix egg and milk together and stir into crumbled mixture. (doing step #1 and #2 in a food processor works really slick).
  • Cover the bottom and 2/3 of the sides of a greased 7x11 inch baking dish.
  • Spread rhubarb over crust.
  • Sprinkle jello over rhubarb.
  • Mix together the topping ingredients and crumble over the jello.

1 cup wheatberries
Salt
About 1 pound rhubarb, cleaned, trimmed, peeled if necessary, and diced, about 1 3/4 cups
1 cup sauterne or other sweet wine
1 tablespoon honey
1/2 teaspoon cinnamon
2 cloves
1 teaspoon grated orange zest
5 tablespoons extra-virgin olive oil
Freshly ground pepper
2 tablespoons chopped mint
1/2 cup chopped walnuts
4 to 5 cups mixed greens (mesclun)

Steps:

  • Simmer the wheatberries and 2 teaspoons of salt in water to cover for 1 1/4 hours, or until the wheatberries are tender but not mushy. Cool.
  • In a small, nonreactive sauce pot, combine 1 cup rhubarb with the wine, honey, cinnamon, cloves and orange zest. Bring to a boil, turn heat to low, and cook for about 15 minutes, or until the rhubarb is soft.
  • Drain, reserving liquid; return the liquid to the pan, and bring it to a boil. Add the remaining uncooked rhubarb, and cook for 3 to 5 minutes, or just until tender. Drain, reserving liquid again.
  • Remove the cloves from the first batch of cooked rhubarb, and place it in a blender along with the reserved liquid. Turn the blender to medium, and add the oil slowly; blend until smooth. Season with salt and pepper, and stir in the mint.
  • Place the wheatberries in a bowl, along with the remaining rhubarb, walnuts, 4 tablespoons of the dressing, and some salt and pepper. Divide among six plates; toss the mesclun with 3 tablespoons of the dressing, and place portions of it on the wheatberries. Drizzle the remaining dressing around the salad, and serve.
