¼ cup melted butter
1 cup drained sauerkraut
8 cups torn lettuce leaves
½ cup sliced green onions
1 tomato, diced
¾ pound deli sliced corned beef, cut into strips
1 ¼ cups Thousand Island dressing
¾ cup shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush both sides of the bread with melted butter, then cut into cubes. Place on a baking sheet, and bake in preheated oven until crisp, stirring occasionally, about 15 minutes. Allow to cool to room temperature, then store in an airtight container.

This version is less expensive to make because you are using canned corned beef rather than fresh deli corned beef but it tastes just like a reuben. The reuben is DH's favorite deli style sandwich and he even asked for a second sandwich then made another a few hours later in the night. I recommend serving these with a side of Michelle S.'s #49062 Mom's German Potato Salad and a sour dill pickle spear. This recipe is courtesy of Southern Living's Easy Weeknight Favorites cookbook.

1 (12 ounce) can hormel corned beef
1 (14 1/2 ounce) can sauerkraut, drained well
1/2 cup thousand island dressing or 1/2 cup Russian salad dressing
1 tablespoon bacon bits
4 slices swiss cheese
1 tablespoon imitation bacon bits
1/2 teaspoon pepper
8 slices rye bread

Steps:

  • Preheat oven to 350 degrees.
  • Toast 4 of the slices of the rye bread.
  • While bread is toasting, combine corned beef, sauerkraut, dressing, pepper and bacon bits, mixing well.

1 cup rye berries
1 large head green cabbage (about 2 pounds)
2 tablespoons salt
1/2 pound thick-cut deli pastrami, cut into 1/4-inch dice
1/2 pound thick-cut Swiss cheese, diced to match the pastrami
6 tablespoons mayonnaise (regular, low-fat, light, or fat-free)
2 tablespoons pickle relish
1 tablespoon ketchup
3 tablespoons cider vinegar

Steps:

  • 1. Soak the rye berries in a big bowl of cool water for at least 8 and up to 16 hours. Drain the rye berries in a fine-mesh sieve or small-holed colander set in the sink. Pour the rye berries into a large saucepan, cover with water by several inches, and bring to a boil over high heat. Reduce the heat to low and simmer until tender, about 1 hour 15 minutes. Drain again in that sieve or colander, then run under cool water to stop the cooking. Drain thoroughly.
  • 2. Slice the cabbage head in half. Cut out the thick, pyramidal core at the base of each half. Set the halves cut side down on the cutting board; make thin slices parallel to the core's former point up in the heart of the cabbage. Separate the shreds from each other and toss them in a large bowl with the salt. Set aside at room temperature for 30 minutes.
  • 3. Rinse the cabbage to get rid of the excess salt, then squeeze it by handfuls to remove any excess water. Dump these handfuls into a large serving bowl as you go. Pour in the cooked rye berries, diced pastrami, and cheese. Toss well.
  • 4. Whisk the mayonnaise, pickle relish, and ketchup in a small bowl; whisk in the vinegar. Pour this dressing onto the salad and toss it up.

LAYERED SALAD
1 whole head of iceberg lettuce
1 bag of sauerkraut, drained (i used 1/2 of bag)
1 lb sliced corned beef, chopped
8 - 12 oz bag of swiss cheese, shredded
1 bottle thousand island or russian salad dressing
1/2 medium onion, sliced or diced then sauteed
6 slice peppered bacon, cooked and crumbled
ADDED TO DRESSING
1 Tbsp horseradish sauce per serving (optional, i like a little kick to the dressing)
FOR CROUTONS
6 slice pumpernickel rye bread, torn and toasted
olive oil
onion salt
garlic powder
caraway seeds

Steps:

  • 1. For my croutons I added some olive oil to my torn bread and tossed them together. Then, I added some garlic powder and onion salt. If I had caraway seed I would have added it too. Then I baked them in oven for 10 minutes at 350.
  • 2. I used an 11 by 15 glass dish and layered my chopped lettuce first.
  • 3. Next layer your sauerkraut on top of the lettuce. (If you have some people who don't like the kraut just layer half of it) Then your chopped corned beef is next.
  • 4. Now add your cheese and roast in the oven at 350 degrees for 5 minutes or so. Just till the cheese is melted.
  • 5. Now, you can add your dressing now or just take it to the table. Add your sauteed onions, crumbled bacon and croutons on top after dressing.
  • 6. Use a spatula or square server utensil to cut down through the meat and cheese to serve.
  • 7. Here is what a Reuben Sandwich looks like here in Ohio at one of our most famous restaurants for this sandwich and it is all stacked up with corned beef. Now I know I cut some major calories by turning it into a salad intead. :-)
