THE ROYAL REUBEN OMELET
Well, St. Paddy's day was upon us and I was browsing recipes in Just a Pinch and stumbled upon this one that needed adopted. So, I added more goodies to fit my taste. Wow, talk about a "decadent omelet" this is it! Every bite is bursting with Reuben flavor and it is such a satisfying omelet too. I love the Shamrock toast to...

Steps:
- 1. Grill up your sliced corned beef and sauerkraut.
- 2. If making this for a celebration for St. Paddy's day, go ahead and cut out your Shamrock bread to make toast.
- 3. Beat your eggs and milk in a bowl with a little salt & pepper. Add to a heated pan w/hot oil and pour in. Now, swirl around a litte so that your omelet cooks evenly. Lift up the edges of egg mixture with spatula to allow uncooked egg to run under. Once it is almost cooked through add your hot corned beef, kraut on top and then squirt on your Thousand Island dressing.
- 4. Fold over omelet in pan....this is a heavy omelet so use 2 spatulas so that it doesn't tear like mine did. No worries though if it does as you are going to add a swiss cheese sauce on top. Yumm
- 5. Meanwhile, heat your butter on medium/low heat in a small pan and then add your flour; stir till combined. Then add your 1/4 cup of half and half and continue to stir. Add, your seasonings and shredded Swiss cheese. Whisk till completely melted and is a nice "pour" consistency. If it is too thick add more half & half.
- 6. Since I live in a town with a few "Irish" folks, I was unable to find any Thousand Island dressing and found an amazing product called "Secret Burger Sauce". On the back of the bottle it reads: "Why go out to a burger joint when you enjoy this bold twist on thousand island flavor at home?." ---This worked perfectly!

- Drain sauerkraut through strainer over bowl until very well drained.

Steps:
- First, prepare the filling. A basic rule of thumb is that you need one quarter to one third cup of filling for every two eggs. If you are using a filling that needs to be cooked - such as apples, mushrooms, onions, peppers, leeks - quickly sauté in a small frying pan with 1 teaspoon of the butter. If you are making a cheese omelette, either slice the cheese thinly or grate it finely and put aside.
- Crack the eggs into a small mixing bowl. Stir gently with a fork until well-beaten. Add the milk or water, salt and pepper, and any herbs, and set aside.
- Heat a 6- to 8-inch omelette pan over high heat until very hot (approximately 30 seconds). Add the butter, making sure it coats the bottom of the pan. As soon as the butter stops bubbling and sizzling (and before it starts to brown), slowly pour in the egg mixture.
- Tilt the pan to spread the egg mixture evenly. Let eggs firm up a little, and after about ten seconds shake the pan a bit and use a spatula to gently direct the mixture away from the sides and into the middle. Allow the remaining liquid to then flow into the space left at the sides of the pan.
- Continue to cook for another minute or so until the egg mixture holds together. While the middle is still a little runny, add the filling. Put in sautéed vegetables or fruit first, near the center, then sprinkle any cheese on top.
- Tilt the pan to one side and use the spatula to fold approximately one third of the omelette over the middle. Shake the pan gently to slide the omelette to the edge of the pan.
- Holding the pan above the serving plate, tip it so the omelette rolls off, folding itself onto the plate. The two edges will be tucked underneath.
- Optional Lowfat Fillings
- Fresh herbs such as parsley, basil, rosemary, dill, tarragon, cilantro or chives Smoked salmon and scallions Yukon Gold potatoes and roasted peppers (for a "peasant omelette") Morel mushrooms Ratatouille Asparagus
LEFTOVER CORNED BEEF OMELET
This tasty omelet uses the same ingredients as a Reuben sandwich, minus the rye bread. Caraway seeds, orange zest, and dill add some rye bread flavor. Just increase all if the ingredients proportionally to the number of eggs, if you are making a larger omelet.

Tips:
- Choose high-quality ingredients. Fresh, flavorful ingredients will make your omelet shine. Look for organic or free-range eggs, high-quality cheese, and thinly sliced deli meat.
- Use a nonstick skillet. This will help prevent the omelet from sticking and tearing.
- Cook the omelet over medium heat. This will help it cook evenly without burning.
- Don't overcook the omelet. An overcooked omelet will be tough and rubbery. Cook it just until the eggs are set and the cheese is melted.
- Be generous with the fillings. Don't be afraid to add plenty of fillings, such as cheese, meat, and vegetables. This will make your omelet more flavorful and satisfying.
- Fold the omelet in half or quarters before serving. This will make it easier to eat and will help keep the fillings inside.
Conclusion:
The Reuben omelet is a delicious and easy-to-make breakfast or brunch dish. It's perfect for using up leftover corned beef or pastrami. With its combination of savory flavors and textures, the Reuben omelet is sure to be a hit with everyone at the table.
