Well, St. Paddy's day was upon us and I was browsing recipes in Just a Pinch and stumbled upon this one that needed adopted. So, I added more goodies to fit my taste. Number Of Ingredients 17

2 oz corned beef, (from deli) torn
1/2 c sauerkraut
3 large eggs
2 Tbsp milk
1 Tbsp unsalted butter
1 bottle thousand island dressing or miracle whip's "secret burger sauce"
salt & pepper
CHEESE SAUCE AND SHAMROCK TOAST
1 - 2 Tbsp butter
1/4 c cream or half and half, (approx. give or take a little)
1 Tbsp flour
1/8 - 1/4 tsp dry mustard
1/2 c swiss cheese, shredded (try & get a good strong swiss)
dark rye or irish soda bread
shamrock cookie cutter
GARNISH
2 stalk(s) green onion, chopped

Steps:

  • 1. Grill up your sliced corned beef and sauerkraut.
  • 2. If making this for a celebration for St. Paddy's day, go ahead and cut out your Shamrock bread to make toast.
  • 3. Beat your eggs and milk in a bowl with a little salt & pepper. Add to a heated pan w/hot oil and pour in. Now, swirl around a litte so that your omelet cooks evenly. Lift up the edges of egg mixture with spatula to allow uncooked egg to run under. Once it is almost cooked through add your hot corned beef, kraut on top and then squirt on your Thousand Island dressing.
  • 4. Fold over omelet in pan....this is a heavy omelet so use 2 spatulas so that it doesn't tear like mine did. No worries though if it does as you are going to add a swiss cheese sauce on top. Yumm
  • 5. Meanwhile, heat your butter on medium/low heat in a small pan and then add your flour; stir till combined. Then add your 1/4 cup of half and half and continue to stir. Add, your seasonings and shredded Swiss cheese. Whisk till completely melted and is a nice "pour" consistency. If it is too thick add more half & half.
  • 6. Since I live in a town with a few "Irish" folks, I was unable to find any Thousand Island dressing and found an amazing product called "Secret Burger Sauce". On the back of the bottle it reads: "Why go out to a burger joint when you enjoy this bold twist on thousand island flavor at home?." ---This worked perfectly!

I came across the Breakfast menu we had to make as a little project, and I seen this on there. and Completely forgot how delicious this was...and how long it had been since I made it! 3 eggs
1 Tbsp half & half
1/2 tsp onion powder
1/3 c shredded corned beef
2 heaping spoonfuls saurkraut (optional)
3 Slices swiss cheese
thousand islands dressing
TT s & p

Steps:

  • 1. Beat the Eggs together with 1T of milk, Salt & Pepper, and the 1/2t of Onion Powder. Until light and fluffy
  • 2. Melt 1T of Butter in the pan, Once melted, add the eggs, and swirl around the pan to evenly coat. Allow to cook for 2-3 mins. Once most of the uncooked egg on the top is gone. Add the Corned beef, Kraut (Optional) And the Cheese.
  • 3. Flip half of the omelet, over the other half, and allow to cook for another 4-5 mins.
  • 4. Remove from the pan and Drizzle with 1000 islands dressing, and Eat immediately! :)

LEFTOVER CORNED BEEF OMELET

This tasty omelet uses the same ingredients as a Reuben sandwich, minus the rye bread. Caraway seeds, orange zest, and dill add some rye bread flavor. Just increase all if the ingredients proportionally to the number of eggs, if you are making a larger omelet.

2 tablespoons 2% milk
½ teaspoon caraway seeds
¼ teaspoon dried dill weed
¼ teaspoon grated orange zest
1 teaspoon butter
2 ounces shredded and chopped cooked corned beef
¼ cup sauerkraut, drained
1 slice Swiss cheese, cut into strips
1 tablespoon Thousand Island dressing

Steps:

  • Whisk together eggs, milk, caraway seeds, dill, and orange zest.
  • Melt butter in a nonstick pan over medium-low heat. Swirl to coat the pan, then pour in the egg mixture. Cover and cook until the eggs are almost set, 3 to 5 minutes.
  • While the eggs are cooking, heat the corned beef and sauerkraut in a microwave until moderately hot, 30 to 60 seconds.
  • Distribute the hot corned beef, hot sauerkraut, and Swiss cheese over the eggs. Cover, turn off the burner, and allow the cheese to melt.
  • Loosen the eggs from the pan using a rubber spatula and carefully fold in half over the fillings. Gently slide the finished omelet onto a plate and top with Thousand Island dressing.

8 large eggs, lightly beaten
1 can (14-1/2 ounces) sauerkraut, rinsed and well drained
2 cups shredded Swiss cheese
1/2 cup chopped green onions
1/2 cup 2% milk
1 package (2 ounces) thinly sliced deli corned beef, cut into 1-inch pieces
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
3 slices rye bread, toasted and coarsely chopped
1/4 cup butter, melted
