1/2 cup loosely packed washed fresh baby spinach leaves, chopped
4 slices soft whole wheat bread, 1/2 inch thick (1 1/2 oz each)
1/4 cup roasted red bell peppers (from a jar), drained, sliced
4 oz sliced cooked turkey breast or chicken breast
2 tablespoons reduced-fat shredded Italian cheese blend
Regular or olive oil cooking spray

Steps:

  • Heat closed contact grill or panini maker for 5 minutes.
  • Place artichoke hearts on paper towels; pat dry. Coarsely chop artichoke hearts.

  • Heat closed contact grill 5 minutes.

I don't have a panini-maker--so my two large cast-iron frying pans get called into action.

1/4 cup pine nuts
2 tablespoons butter
1/2 cup shallot, sliced
1 (8 ounce) jar artichokes, quartered, drained
1 loaf focaccia bread
8 tablespoons mayonnaise, divided
1 bunch spinach, fresh, divided
1 cup asiago cheese, grated
1 lb turkey breast, sliced, divided
salt & pepper, taste
1 dash cayenne chili pepper flakes (optional)
8 slices sun-dried tomatoes, packed in oil, drained

Steps:

  • Lightly toast pine nuts in cast-iron frying pan or oven; pour nuts into small bowl; set aside to cool.
  • Melt butter in empty pan, sauté shallots, stirring lightly; set aside.
  • Coarsely chop artichokes, then add to shallots in warm pan; set aside.
  • Cut focaccia bread into four equal sandwich portions, then slice horizontally; spread each slice with one tablespoon of mayonnaise.
  • Layer spinach and tomato slices equally on four of the bread slices.
  • Add the grated cheese and toasted pine-nuts to the artichokes-shallot mixture in the pan; quickly divide into four portions and spoon over the spinach and tomatoes.
  • Add one fourth of the turkey breast meat to each of the sandwiches, lightly add salt & pepper and cayenne pepper flakes to taste; put the lid on the sandwich and press lightly.
  • Place sandwiches into panini-maker and heat per manufacturer's suggestions....OR....place sandwiches into large buttered medium-hot frying pan, place another heavy frying pan on top; then press down firmly to heat sandwich like this for 1-2 minutes.

1 nice loaf asiago or pesto focaccia bread, plain is fine, too
1 cup prepared spinach artichoke dip/spread (less if preferred, but i like a lot)
*shaved asiago cheese and parmesan cheese
1/2 lb. sliced turkey, leftover roast turkey or turkey from the deli, *can also sub rotisserie chicken
6-8 sliced tomato, fresh or oven roasted*, see below
1 small red onion, chopped or sliced
1 Tbl. olive oil
1 Tbl. aged sweet balsamic vinegar
*more shaved asiago cheese and parmesan cheese
*3 friends to share it with

Steps:

  • 1. *If roasting tomatoes, roast now and set aside. (Directions below.) Preheat panini grill to medium temperature. In a medium sauce pan, sauté diced red onion in olive oil until transparent. Add balsamic vinegar and salt and pepper to taste. Slice the loaf of pesto focaccia into two semi-circles, and halve each semi-circle. Spread half of the dip/spread onto bottoms. Top with asiago shavings, as much or little as you like. Srinkle with parmesan cheese. Top with turkey. Top with sautéed onions and tomato slices. Spread tops with rest of dip/spread, top with more asiago and parmesan. Place tops on and lightly press. Brush tops of paninis with olive oil and place oiled side-down. Brush tops with oil. Close lid properly and grill 5 minutes on medium or until the cheese begins to melt and there are grill marks on the focaccia bread. Serve hot with chips or your favorite soup! Enjoy!
  • 2. How to oven roast tomatoes: 4 small vine-ripened tomatoes, round or romas olive oil for drizzling salt and pepper a few pinches dried or fresh thyme Pre-heat the oven to 300ºF. Put a cooling rack over a baking sheet. Slice the tomatoes, horizontally, into thirds and arrange the slices on the rack. Put the top and bottom of the tomatoes, cut-sides up, on the rack. Dress the tomatoes with a little EVOO and season with salt and pepper, to taste, and a little dried or fresh thyme. Roast the tomatoes for 1 hour. Remove the tomatoes from the oven and arrange them on a serving platter. Store leftovers in fridge for up to 2 weeks or freeze.

1 tablespoon balsamic vinegar
1 -2 tomatoes, sliced (6-8 slices)
1 pinch salt and pepper

Steps:

  • Preheat panini grill to medium temperature. In a medium sauce pan, sauté diced red onion in olive oil until transparent. Add balsamic vinegar and salt and pepper to taste.
  • Slice the loaf of pesto focaccia into two semi-circles, and halve each semi-circle. Layer the turkey onto the bottom halves of the focaccia bread, and spread spinach artichoke mix over turkey. ¼ cup mayonnaise
2 ciabatta rolls
1 tablespoon olive oil, divided
2 slices provolone cheese
1 cup whole fresh spinach leaves, divided
¼ pound thinly sliced mesquite smoked turkey breast
2 roasted red peppers, sliced into strips

Steps:

  • Mash the avocado and the mayonnaise together in a bowl until thoroughly mixed.
  • Preheat a panini sandwich press.
  • To make the sandwiches, split the ciabatta rolls in half the flat way, and brush the bottom of each roll with olive oil. Place the bottoms of the rolls onto the panini press, olive oil side down. Place a provolone cheese slice, half the spinach leaves, half the sliced turkey breast, and a sliced roasted red pepper on each sandwich. Spread half of the avocado mixture on the cut surface of each top, and place the top of the roll on the sandwich. Brush the top of the roll with olive oil.

1 (6 ounce) jar artichoke hearts packed in oil, drained & chopped coarsely
1/8 cup sliced roasted red pepper
1/3 cup pitted kalamata olive, sliced thinly
1 teaspoon minced lemon zest
3/4 teaspoon dried oregano
1 tablespoon chopped fresh flat-leaf parsley
salt and pepper
1/2 head roasted garlic
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
4 slices light rye bread
1 tomatoes, sliced thinly
4 slices provolone cheese
8 slices mozzarella cheese
olive oil

Steps:

  • Combine the tuna (don't drain) with the drained, chopped artichokes, red peppers, olives, lemon zest, oregano, parsley and salt and pepper to taste. Set aside.
  • In a separate bowl, combine the roasted garlic with the mayonnaise, Dijon, lemon juice and a little bit of salt and pepper.
  • Spread the garlic mayonnaise on all four slices of bread, top two slices with provolone, then the tuna-artichoke mixture, then tomato slices and then mozzarella. Top with another slice of rye bread.
  • Preheat a panini grill, barbeque or cast iron skillet. Brush tops of both sandwiches with olive oil and flipping that side down, place on the grill. Brush what are now the tops of both sandwiches with more olive oil and close grill or wait to flip once bottom is browned. Sandwiches are done when bread is browned and cheese is melted.
  • Slice on an angle and serve.

2 garlic cloves
1 teaspoon lemon zest
