Steps:

  • Combine water, pinto beans, and garlic into a large pot and cover; Cook over low heat for 5 1/2 hours; stir salt into beans and continue cooking until beans are very soft, about 30 minutes more.
  • Heat canola oil in a skillet over high heat. Spoon the beans into the skillet without draining excess water; mash beans using a potato masher until they begin to lose their shape, about 3 minutes.

1 ¾ cups dry pinto beans
1 cup diced yellow onion
2 large cloves garlic, chopped
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon celery seed
¾ teaspoon salt
½ teaspoon ground black pepper
⅔ cup fire-roasted diced tomatoes (such as Hunt's®)
½ teaspoon hot pepper sauce (such as Tapatio®)
¼ teaspoon dried Mexican oregano
¼ teaspoon cayenne pepper

Steps:

  • Put the pinto beans in a bowl and cover with 2 inches of water. Soak for 8 hours to overnight.
  • Transfer the beans to a medium saucepan and cover with water by about 1 inch. Add onion, garlic, chili powder, cumin, celery seed, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and let cook for 1 1/2 hours.

4 whole garlic cloves, peeled
½ teaspoon dried epazote
9 cups cold water
½ cup lard
1 ½ cups diced onions
2 teaspoons kosher salt

1 teaspoon ground dried chipotle pepper

Steps:

  • Drain soaked beans and transfer them to a stock pot. Add garlic, epazote, and cold water. Place pot over high heat and bring to a boil. Stir. Reduce heat to low. Simmer uncovered until beans are soft, 1 1/2 to 2 hours. Drain the beans and reserve all the liquid.

12 (6-inch) flour tortillas

  • MARINATE THE STEAK: Combine 1 cup of the salsa, the garlic, 2 tablespoons of the oil, the Worcestershire, and lime juice in a resealable plastic bag and add the steak. Shake to evenly disperse and marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.
  • SET UP: Preheat the oven to 300 degrees F. Wrap the tortillas in aluminum foil and keep warm in the oven.
  • SEAR THE STEAKS: Heat a large skillet over medium-high heat. Remove the steaks from the bag, allowing the large salsa bits and extra marinade to drip off, and pat with paper towels to dry slightly. Sprinkle with 1 teaspoon salt and a couple turns of pepper. Pour the remaining 2 tablespoons oil into the skillet and cook the steaks on one side until browned, about 4 minutes. Flip and cook until charred and medium-rare, about 3 more minutes. Let rest on a cutting board before slicing.
  • MASH THE BEANS: Add the beans with their liquid to the same skillet and cook until the liquid has reduced by half, 4 to 6 minutes. Mash with a potato masher until smooth.
  • ASSEMBLE THE TACOS: Slice the steak against the grain into 2- to 3-inch-long pieces. Spread the center of each tortilla with 1 tablespoon of the beans. Arrange a few slices of steak on top of each with some of the remaining salsa and some cilantro. Serve the extra beans on the side.

2 tablespoons bacon drippings or 2 tablespoons lard
2 garlic cloves, minced
2 lbs canned pinto beans (with the liquid)

Steps:

  • In a large frying pan put the oil and garlic. Heat over medium heat until the edges of the garlic start to lightly brown.
  • Add the can of pinto beans with their liquid. Stir and mash (using a potato masher) for 10-15 minutes until the mixture is fairly smooth.
  • The beans might be a bit runny, but once they have cooled and been reheated, they will have thickened.
  • One of my daughters likes to have whole beans in her refried beans, so I keep some of the whole pinto beans aside and add them the last minute or two.
  • This recipe serves 3-4 as a side dish. If you want to make up this recipe for bean and cheese burritoes, you will have to double the recipe.
  • I often like to add a little cumin powder and a dash of oregano to this recipe while the beans are cooking.

4 links smoked Mexican chorizo
1/4 cup extra-virgin olive oil
1/4 white onion, finely diced
2 cloves garlic, peeled and chopped
2 (15.5 ounce) cans red kidney beans
1 to 2 cups low-sodium chicken stock
Kosher salt and freshly ground black pepper

Steps:

  • Finely chop the chorizo into small dice. In a heavy-bottomed pot add olive oil and chorizo. Put the pot over low heat and slowly bring the heat up to medium. Fry the chorizo for a few minutes to infuse the olive oil. Using a slotted spoon remove about 1/4 cup of chorizo, for garnish, and set aside. To the remaining chorizo in the pot add the onion and garlic and fry until both are cooked, about 2 minutes. Add the beans with their liquid and stock and simmer to allow the flavors to come together about 10 minutes. Season with salt and pepper, to taste. Use a potato masher to mash the beans into a coarse puree. Alternatively, you could let the beans cool for about 5 minutes and carefully puree in a food processor until smooth. 1/3 cup vidalia onion, minced
7 garlic cloves, minced

2 jalapenos, seeded, stemmed, & diced (optional)
1 teaspoon ground cumin

Steps:

  • Sort & rinse beans. Place in crockpot, cover with water and soak 8 hours or overnight.
  • Drain water from beans & rinse again. Remove water from the crockpot and rinse again.
  • Place back in crock pot and add water & salt. Cover and cook on low 10 hours.
  • Reserving liquid, drain beans & place in bowl.
  • Heat oil in skillet & saute onions and garlic over medium heat until tender. Transfer to blender.
  • Add chilies, cumin, and jalepenos, and blend until smooth.
  • Add cooked beans (in batches---there's too much to do all at once) to blender and blend until smooth. Pour into crock pot.
  • Stir well and gradually add reserved liquid until beans reach desired consistency.

1 (16 ounce) can refried beans
1 medium tomatoes
1 small onion
2 jalapenos
2 cups shredded cheddar cheese or 2 cups monterey jack cheese
4 large flour tortillas
Pam cooking spray or butter
salsa, and or guacamole

Steps:

  • Trim breast and pound to 1/4 inch cutlets. Completely coat cutlets in a 50/50 mixture of Chili Powder and Cumin. In a large pre-heated oil-coated skillet, fry cutlets until cooked through over med-high heat. Let cutlets cool for 10-15 minutes then cut into bite-size strips.
  • Heat Refried Beans over low heat while letting chicken cool and cutting vegetables.
  • Dice tomato into bite-size pieces. Mince onion and jalapenos (seeded or not depending on your heat preference).

Spread 1/4 of the refried beans on one side of tortilla leaving about a 1/2 to 1 inch of uncoated tortilla around the edges. Fill the center of bean coated tortilla with chicken, tomatoes, onions, jalapenos, and cheese. Roll up the tortilla into the shape of a burrito.
  • In a large skillet (Preferably cast iron, but not necessary) preheated to medium and sprayed with PAM or lightly coated with butter, placed burritos in the pan with the folds face down. Cover and fry for about 5 minutes. Flip and cook for 5 more minutes while covered. Tortilla shell should become nicely toasted.
  • Serve with Salsa and or Guacamole on the side. I also make some Spanish rice to go along with this dish as well. Enjoy!

1 small onion, chopped
1 jalapeno pepper, seeded and chopped
1 garlic clove, minced
2 teaspoons vegetable oil
1 can (16 ounces) refried beans
2 tablespoons water
1 teaspoon hot pepper sauce
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a large skillet, saute the onion, jalapeno and garlic in oil for 2-3 minutes or until tender. Stir in the beans, water, hot pepper sauce, cumin, chili powder and cayenne. Cook and stir over medium-low heat until heated through. Transfer to a serving bowl; sprinkle with cheese.
