GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

LINDA'S LIME JELLO SALAD
This is an old recipe of my mothers, though I am not sure where it originated. I am not a fan of lime or even marshmallows really, but this stuff is dee-lish! I always serve it with Thanksgiving, Christmas and Easter dinner. When I cook birthday dinners for family, it is requested then as well.

REFRESHING LIME JELLO SALAD
My mother used to make this all the time when I was growing up. One of my favorites and very easy to make. I don't know where she got it, but thought I'd share

Steps:
- 1. Prepare jello according to directions, refrigerate until just beginning to jell
- 2. Stir in crushed pineapple and cottage cheese until well blended. Refrigerate at least 2 hours before serving.
Tips:
- Use fresh limes for the best flavor. If you don't have fresh limes, you can use bottled lime juice, but the flavor will not be as good.
- Chill the jello salad for at least 4 hours before serving. This will allow the flavors to meld and the salad to set properly.
- Serve the jello salad with a dollop of whipped cream or a scoop of vanilla ice cream. This will add a touch of sweetness and creaminess to the salad.
- You can add other fruits to the jello salad, such as strawberries, blueberries, or raspberries. This will add a pop of color and flavor to the salad.
- If you want a more tart jello salad, you can add more lime juice. If you want a sweeter jello salad, you can add more sugar.
Conclusion:
Lime jello salad is a refreshing and delicious dessert that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With its bright green color and tangy flavor, lime jello salad is sure to be a hit at your next party or potluck.
