Loaded with peanut butter, peanut butter cups and chocolate!! Soft, gooey and totally irresistible! Everything's better with peanut butter cups!!

1/2 cup unsalted butter (1 stick), melted
1/3 heaping cup peanut butter (I use Jif, Skippy or similar; natural PB can separate and/or be too oily)
1 large egg
1 cup light brown sugar, packed
1 tablespoon vanilla extract
1 cup all-purpose flour
1/2 cup semi-sweet chocolate chips, plus more for sprinkling on top
about 16 miniature peanut butter cups, unwrapped (not to be confused with the smallest size that come unwrapped called 'minis')

Steps:

  • Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
  • To a large, microwave-safe bowl add the butter and heat on high power to melt, about 1 minute.
  • Wait momentarily before adding the egg so you don't scramble it. Add the peanut butter, egg, brown sugar, vanilla, and whisk until smooth.
  • Add the flour and stir until just combined, don't overmix.
  • Add 1/2 cup chocolate chips and stir to combine.
  • Turn batter out into prepared pan, smoothing the top lightly with a spatula.
  • Evenly distribute the peanut butter cups over the surface of the batter, pushing each cup down as far as it will go.
  • Evenly sprinkle the surface with additional chocolate chips, about 1 tablespoon.
  • Bake for about 22 to 25 minutes, or until done. If you can find a chocolate chip-free patch to test, a toothpick inserted in the center should come out clean, or with a few moist crumbs, but no batter.
  • Allow bars to cool in pan for at least 1 hour before slicing and serving.

No bake-very easy! They have a lower sugar to peanut butter ratio than other recipes I have seen but are still very rich(!) and quite similar to reeses pb cups.

1 1/2 cups graham cracker crumbs (very finely crushed)
2 cups powdered sugar
11 tablespoons butter, melted
1 cup creamy peanut butter
1 cup milk chocolate chips

Steps:

  • Mix the crumbs and sugar (sifted is better).
  • Add the melted butter and peanut butter.
  • Mix well and press into a 9x13 inch pan.
  • Melt the chocolate chips in microwave on 70% (about a minute 15 seconds in mine.).
  • Spread chocolate over the bars.
  • Refrigerate till hard, then take out about 15 minutes before you want to cut them, so the frosting won't crack.

Oil, water and egg called for on cookie mix pouch
3/4 cup (from 14-oz can) sweetened condensed milk (not evaporated)
1/3 cup creamy peanut butter
1 cup (from 8-oz package) Reese's minis peanut butter cups, coarsely chopped
1 cup semisweet chocolate chips
1/2 cup Reese's peanut butter chips
1/2 cup cocktail peanuts, chopped

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • In large bowl, mix cookie mix, oil, water and egg with spoon until soft dough forms. Press dough in bottom of pan. Bake 15 minutes.
  • In small bowl, mix condensed milk and peanut butter. Pour evenly over baked crust, carefully spreading to edges. Sprinkle chopped peanut butter cups, chocolate chips, peanut butter chips and peanuts evenly over top. Bake 18 to 22 minutes or until bubbling along edges. Cool completely on cooling rack, about 1 hour. Cut into 6 rows by 4 rows.

1 cup butter
2 cups graham cracker crumbs (about 1 cellophane package and 3 extra grahams)
2 cups powdered sugar
1 cup smooth peanut butter
2 cups chocolate chips

Steps:

  • Mix butter, graham cracker crumbs, powdered sugar, and peanut butter. (an easy way to measure the peanut butter is to put 1 cup of water into a measuring cup, and then add enough peanut butter to it that the water reaches 2 cups).
  • Press mixture into a 9x13" pan.
  • Melt chocolate chips in microwave and stir until smooth (try a minute first, and then check).
  • Spread chocolate carefully over peanut butter layer with a spatula. (Having one person to pour the chocolate and one to spread works well!).
  • Let the chocolate cool for a while, and then cut into bars before the chocolate is completely hardened (or else the chocolate layer will just crack).

COOKIE CRUST (FIRST LAYER):
1/2 c sugar
1/2 c brown sugar, firmly packed
1/2 c butter (softened)
1 egg
1 tsp vanilla
1 1/4 c all-purpose flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 c chopped mini Reese's peanut butter cups
SECOND LAYER (REESE'S PEANUT BUTTER FILLING)
1 c butter (melted)
2 c graham crackers, crushed
2 c confectioners' sugar (sifted)
1 c peanut butter (crunchy or creamy)
TOP LAYER (CHOCOLATE PEANUT BUTTER)
1 pkg semi-sweet chocolate chips, 12 oz.
1/2 c peanut butter

  • 1. Cookie Layer: Pre-heat oven to 350 degrees. Line a 13x9 pan with parchment paper or aluminum foil over the edges for easy lifting and cleaning.
  • 2. Sift and blend dry ingredients; set aside.
  • 3. In a separate bowl, using a mixer mix sugars, butter, egg, and vanilla until light and fluffy.
  • 4. Slowly add dry ingredients until well blended (the consistency of cookie dough). Fold in the chopped peanut butter cups.
  • 5. Spread evenly in the lined pan to the edges. Bake 15-20 minutes until golden. Be careful to check edges.
